I was craving creamy pasta so bad the other week that I had to whip up a classic carbonara. It was so delicious it didn't stay on my plate for very long. This dish is right at the top of my favourite comfort foods, and is great for a special occasion if you don't have much time but want something that will impress. Perfect served with some oozing garlic bread.
Serves 2
- 100g pancetta, cubed
- 150g mushrooms, sliced
- 2 cloves of garlic, crushed
- 200g spaghetti
- 2 eggs, beaten
- 150ml double cream
- pepper
- fresh parmesan, grated
1. Fry the pancetta in olive oil or butter until it starts to crisp, then add the mushrooms and garlic and cook until softened.
2. Meanwhile, in salted boiling water, cook the spaghetti according to packet instructions (about 10 mins).
3. Mix together the beaten egg and cream in a jug and add as much black pepper as you like. Stir in a generous amount of grated parmesan.
4. When the spaghetti is cooked, drain and add to the pan with the pancetta and mushrooms.
5. Pour in the egg and cream to the pasta and stir until combined over a low heat for a few minutes.
6. Serve immediately and grate a generous amount of parmesan on top and some more pepper, et voila!

Pasta, pasta, pasta
Just a quick post on three pasta dishes I have made over the last couple months. Two I have posted about before so I will link them below, and one which is pretty simple but delicious.
Enjoy :)
Carbonara
This is the best carbonara recipe I've ever come across and it turned out even better the second time - just make sure you let the sauce reduce enough! You can find the recipe here
Pesto pasta with salmon and green beans
If you've read my other posts you will know I love pesto pasta - and this is exactly that, with green beans, spinach and salmon which I brushed with olive oil and fresh garlic before baking in the oven (wrapped in foil, 180 degrees) for 20 minutes. Finish it off with lots of fresh parmesan mm mm.
Macaroni cheese
This is the amazing Lisa Faulkner recipe that I've posted about before here. This time I left out the leeks and added a lot more bacon (I made it for my sister and she's very fussy!) This is perfect comfort food for this cold month.Enjoy :)

Tomato and basil bruschetta
A delicious taste of Italy! Tomato and basil are the perfect match, and even better with a dash of balsamic vinegar, basil (green) pesto and a sprinkling of parmesan. These are a crowd-pleasing starter or side dish accompanying any Italian-style food, particularly a pasta dish. So easy to put together but such impressive flavours. Bruschetta is so versatile - you can top it with anything: garlic butter, caramelised onion and goats cheese, mozzarella and sun dried tomato, herby mushrooms etc etc. I served this with carbonara - the recipe is here!
Serves 2
- 1/2 baguette, sliced into eight (I used wholemeal)
- few dollops of green pesto
- large handful of cherry tomatoes, sliced or quartered
- few leaves of fresh basil, torn
- dash of balsamic vinegar
- small handful of parmesan, grated
1. Pre-heat the oven to gas mark 4 / 180 degrees. Place the tomatoes and fresh basil in a bowl and stir in some balsamic vinegar (the smell is amazing!)
2. Spread green pesto on each slice of bread, and place on a baking tray.
3. Spoon the tomato and basil mixture on each slice, grate some parmesan on top, if desired, and bake in the oven for 10-15 minutes or until the bread is crisp and hot to touch.
Enjoy :)

The best carbonara
I love anything pasta, hence why a lot of my posts are pasta dishes - and when cream, parmesan, bacon and garlic are involved, how could anyone say no? I have two similar posts - fettucine alfredo here and baked spaghetti carbonara here. I didn't use egg in this carbonara recipe, because the cottage cheese has a similar texture of coating the pasta. I wouldn't usually use onion in carbonara (I don't know why, it just seems weird?) but it was perfectly fine; I guess because it's chopped so fine you barely notice of it - it isn't particularly needed but it does add extra flavour. I have also started using fresh garlic cloves (as opposed to ready-ground) and I'm so glad because the flavour and aroma is sooo much nicer, I would definitely recommend! If you don't like mushrooms then don't add them, and likewise with the bacon if you are vegetarian. Such a simple but impressive meal to whip together, and I like to think it's healthier than a standard carbonara, since I used a little bit of single cream and the majority of low fat cottage cheese (which is so high in protein). I served this with tomato and basil bruschetta mmmm,
Serves 2
- 200g spaghetti
- large dollop of butter
- 1 small onion, finely chopped
- 3 garlic cloves, crushed (less if you aren't a garlic fan)
- 4-5 rashers of smoked bacon, cubed
- 150g mushrooms
- 250g cottage cheese
- 100ml single cream
- handful of parmesan, grated
- ground pepper
1. Soften the onion and garlic in a pan with the melted butter for a few minutes. Add the bacon and fry until cooked through and beginning to crisp.
2. Meanwhile, cook the spaghetti in salted water according to packet instructions (around 10-12 mins)
3. Add the mushrooms to the garlic and onion and cook until softened, then add the cottage cheese. Stir until the cottage cheese has completely melted. It will look watery a this stage, especially with the mushrooms, but don't worry, it will thicken up as you keep cooking!
4. Add the cream and keep stirring until it has reduced and thickened to your liking, add some pepper to taste.
5. Drain the spaghetti, return to the pan, stir through the sauce, and serve.
Enjoy :)

Spaghetti alla carbonara (al forno)
I love pasta and I'm always tempted to order carbonara whenever I go to an Italian restaurant even though I always leave half of it because it's too rich, and even though I know I can make it easily at home! I remember going to stay with a friend in the South of France and there was this restaurant where we always used to order carbonara, and on top of the thick creamy sauce, was an egg exploding with the rich yolk - it was delicious but only for about 2 or 3 mouthfuls. This recipe I prefer because it is much lighter, but can be too dry for some people so just make sure to add more double cream depending on the consistency you prefer. I also love that it is baked (al forno) in the oven because it means the top layer of spaghetti is crisp, as is the parmesan. I wish I had added a bacon breadcrumb topping because that would have made this dish!
(The photos above were taken before I baked it in the oven, sorry)
Serves 2
Ingredients:
- 200g spaghetti pasta
- 4 rashers of smoked bacon, chopped
- 150g mushrooms, sliced (optional)
- knob of butter (for frying)
- 1/2 garlic clove, finely chopped or 1 tsp powdered garlic
- 1 egg, beaten
- double cream or crème fraiche (as much as you want to add)
- parmesan (as much as you want)
- handful of parsley, finely chopped
1. Boil the spaghetti in salted water, following cooking times on the packet.
2. Meanwhile, fry the bacon with the mushrooms, if using, in the butter and garlic.
3. Once the spaghetti is cooked, drain, and return to the pan, adding the bacon and mushroom.
4. Stir in the egg, double cream, half the parmesan and half the parsley. Season to taste.
5. Transfer the spaghetti to an oven proof dish, and sprinkle with the remains of the parsley and the parmesan. (This is where you can add a bacon crumb - chopped bacon fried with breadcrumbs).
6. Bake in the oven at 180c/gas mark 4 for about 20-30 minutes, or until the golden brown colour and crispiness you desire.
Enjoy :)
The basis for this recipe comes from my Comfort Food book which I love - every page is mouthwatering!
