Cider & wholegrain mustard chicken

Tender chicken thighs in a creamy, cider sauce with a wholegrain mustard & parsley tang.
Best served with rice and tenderstem broccoli
Serves 2
- olive oil
- 250g chicken thighs
- 1 onion, chopped
- 1 garlic clove, crushed
- 200ml cider
- 100g crème fraiche
- 2 generous tsp wholegrain mustard
- handful of fresh parsley, chopped

1. Fry the chicken thighs in the olive oil in a deep pan until cooked, then remove and set aside.
2. Fry the onion and garlic in the same pan then add the cider and bring to the boil.
3. Return the chicken to the pan and cover and simmer for ten minutes, or until reduced.
4. Stir in the crème fraiche, mustard and parsley - bubble for 5 minutes then serve on a bed of rice.

Sun-dried tomato stuffed pepper

A delicious meat-free dish, perfect as a starter or for a healthier mid-week dinner

Serves 1 as a main, or 2 as a starter
- 1 large red pepper
- 60g cous cous
- 2 tsp red pesto (I used a Napolina tomato & garlic one)
- salt & pepper
- dried mixed herbs
- sun dried tomatoes, chopped
- soft goats cheese, crumbled
- 1/2 slice of bread, crumbled
- parsley to garnish

1. Pre-heat the oven to 180 degrees.
2. Cut the red pepper in half and de-pip it. In a baking tray, brush the pepper inside and out with oil from the jar of sun-dried tomatoes (or olive oil). Place in the oven for 10 minutes to soften.
3. Prepare the cous cous according to packet instructions (add boiling water to a bowl of dried cous cous and cover for 5 minutes until soft to the bite and fluffy).
4. Stir the pesto into the cooked cous cous, season with salt & pepper and dried herbs, and stir in as many sun dried tomatoes and as much goats cheese as you wish.
5. Remove the peppers from the oven (they should be softer and have a bit of colour), and stuff each half with the cous cous mixture.
6. Sprinkle with the chunky breadcrumbs then bake in the oven for another 15-20 minutes, or when the pepper is cooked and the breadcrumbs crisp. Garnish with parsley and serve!

Soda bread

Perfect served hot from the oven, smothered in butter with a bowl of soup for a pick me up on a cold day!
I bought some cream of tomato soup for lunch and wanted to make some bread to go with it, but needed a quick, easy recipe so I thought soda bread would be perfect. Soda bread uses buttermilk (or milk and lemon) and bicarbonate of soda as a raising agent, rather than yeast, so it is really simple and quick to make but has great flavour from the cheese and herbs in this recipe. 
It is quite a dense bread so is great with something runny like soup. I used my lovely mum's recipe - she always makes it and it is delicious so I wanted to give it a try. The original recipe uses half wholemeal and half plain flour but I didn't have any wholemeal so used all plain (to my mum's dismay) and it worked just as well so it is up to you what you choose to use!
I am ashamed to say that my boyfriend and I ate both the loaves I made in one sitting (it's better hot from the oven anyway...) but realistically this recipe will serve 4 as the original recipe says to divide into 4 balls of dough to bake. It's up to you if you want to separate it into just two like we did, or one big one - although remember that the bigger it is, the longer it will take to cook in the middle so cooking times may vary.
Serves 2-4
- 225g wholemeal flour
- 225g plain flour
- 1 tsp salt
- 2 tsp baking powder
- 1 tsp bicarbonate of soda
- 50g butter
- 2 tsp dried mixed herbs
- 75g cheddar cheese, grated
- 250-300 ml milk
- 2 tsp lemon juice
1. Pre-heat the oven to 200 degrees, and grease and flour a baking tray.
2. In a large mixing bowl, sift together the flour, salt, baking powder and soda.
3. Stir in the butter, herbs and grated cheese.
4. In a separate jug, mix together the milk and the lemon juice, then pour enough into the bowl to make a soft dough. (The original recipe said 300ml of milk and I found this too much and had to add a lot more flour to get it to the right consistency, so add less milk first as you can always add more!)
5. Knead lightly in the bowl until the correct consistency then break into 4 or 2 equal pieces and round into a ball shape.
6. Place on the baking tray and flatten the tops slightly, and cut two parallel slashes in the top of each.
7. Bake in the oven for 20-30 minutes, then slice and serve hot with lots of butter! (Which has to be lurpak...)

Roast Chicken

Buying a whole chicken to roast from the supermarket is a much more cost-effective way of having chicken if you like all the different parts of the chicken. I personally prefer the leg, thigh and wing meat to the breast but all the chicken you can get off this roast is great to use throughout the week once you've had your Sunday Roast. I had a portion of chicken the night I cooked it and then set most of it aside for a chicken pie the following night (recipe to follow!) and the rest of it I have frozen to use in sandwiches or to make chicken stir fry with next week. I highly recommend buying a whole chicken as it will go a long way and I find the meat to be so much more moist, tender and flavoursome. 
I have done a post on roast chicken before here: www.eatrainbowlove.blogspot.co.uk/2012/10/roast-chicken.html so this will be pretty similar but thought I would do another one just to encourage everyone to roast their own chicken because it is a lot easier than you may think and will leave you with lots of delicious meat which will transform your meals for the following week!
You will need
- whole medium (or large) chicken
- olive oil
- 2 cloves of garlic, crushed
- dried mixed herbs
- herb and spice blend for chicken (or just salt, pepper, paprika)

1. Pre-heat the oven to 190 degrees.
2. Place the chicken in a roasting dish and brush with a generous amount of olive oil
3. Coat with the crushed garlic and sprinkle with the herbs and spices.
4. Cover with foil and roast in the oven for an hour, then baste the chicken (brush with the juices in the bottom of the roasting dish) then return to the oven for another 45 minutes with the foil still on. (Cooking time will vary depending on size)
5. Rest for a few minutes before carving and serving, then you can enjoy a delicious roast chicken dishes and roast chicken sandwiches for the rest of the week!

Chicken, chorizo & potato bake

This is a new mid-week favourite of mine - super delicious, quick and easy but different to anything else I usually have. Definitely one for you all to try as it has tons of strong flavours and the crisp texture from the roasted potatoes compliments the soft chicken and chewy chorizo perfectly. The best part is, everything cooks together in one roasting tin!

Serves 2 

- 250g new potatoes
- olive oil
- 4 chicken thigh fillets (skinless & boneless)
- 1 tsp paprika 
- sprinkle of ground cinnamon
- sprinkle of dried thyme or mixed herbs
- dried chorizo sausage, sliced
- 75g cherry tomatoes, halved
- 1 garlic clove, crushed

1. Pre-heat the oven to 200 degrees.
2. Halve or quarter the new potatoes and toss with plenty of olive oil in a baking tin/tray and season. Place in the oven for about 15 minutes while you prepare the rest of the ingredients.
3. Cut the chicken thigh fillets in half and place them in a bowl. Add the paprika, cinnamon and herbs and stir until the chicken is coated.
4. Take the potatoes out of the oven and place the chicken in the tray around them. Scatter the chorizo,  tomatoes and fresh garlic around the chicken and potatoes as well and place in the oven after seasoning and sprinkling with some more herbs.
5. Cook in the oven for a further 20 minutes, or until the chicken is cooked and the potatoes crisp.

Beef Bourguignon

I'm surprised to say that I don't think I've ever even tried beef bourguignon before, so when I wanted to cook this for mother's day I decided to stick with Lisa Faulkner's recipe, since her recipes always turn out well and are delicious - this was no exception. I even served it with mustard mash, as she suggested, and it all worked beautifully together, everyone loved it. I would highly recommend this recipe, even though I don't have any others to compare it to (I've heard Lorraine Pascale's is also good), because the beef was so tender and the flavours were amazing from the shallots, wine and bacon mm mm. Perfect for a special occasion.

Serves 4-6
- 500g stewing/braising steak
- flour, for dusting
- olive oil, for frying
- 200g bacon lardons
- 300g shallots, peeled and halved
- 3 garlic cloves, crushed
- 2 tbsp tomato purée
- 125g button mushrooms
- 500ml red wine
- 250ml beef stock
- 1 bouquet garni (dried parsley, thyme, rosemary and bay leaf)
- salt and pepper

- mustard mash - potatoes, milk, butter, wholegrain mustard

1. Preheat the oven to 160 degrees.
2. Coat the beef in seasoned flour.
3. Heat a generous amount of oil in a large casserole dish and brown the meat. Using a slotted spoon, remove the meat and set aside.
4. In the same dish, add the lardons, shallots and garlic and fry until browned.
5. Add the tomato puree and mushrooms. Return the beef to the dish and add the wine, stock and herbs.
6. Bring to the boil then cover with a lid and cook in the oven for around 3 hours. Serve with mustard mash!

Chicken casserole

Once again, sorry for the un-appetising photos but there's no pleasant way to photograph any sauce that has leeks and mushrooms in ha... This was something I threw together at the last minute and it turned out really well in the end. I called it a casserole but it doesn't even go in the oven so it's really simple and quick to make but tastes delicious. It's made with chicken thighs which I love as they're so tender. Best served with rice!

Serves 2
- olive oil
- 3 skinless and boneless chicken thighs, cut in half
- plain flour
- 1 leek, sliced
- 3 rashers of bacon, chopped
- 100g mushrooms, quartered
- 100ml white wine
- 250ml chicken stock
- 1 tsp dried parsley or mixed herbs

1. Heat some olive oil in a pan and coat the chicken thighs in some flour - cook the chicken thighs in the oil until golden brown. Set aside.
2. Next, fry the bacon, leek and mushrooms in the pan until softened. Pour in the wine and chicken stock and simmer for about 10 minutes. (Meanwhile, cook the rice in a separate pan)
3. Return the chicken to the pan and add the herbs and seasoning. Cook for a further 5 minutes then serve with the rice.

Perfect potato wedges

This is just a quick post to show you how to make some really good wedges to go with every meal. They are  soft inside even without parboiling, and really crunchy with tons of flavour. I made some to go with chicken drumsticks the other night, mm mm (perfect with BBQ sauce too!)

Serves 1
- olive oil
- 1 baking potato
- schwartz season-all spice (salt, paprika, pepper, garlic etc.)
- mixed herbs

1. Pre-heat the oven to 200 degrees.
2. Drizzle some oil in a baking tray and place in the oven to heat.
3. Meanwhile, cut the potato into wedge shapes - fairly thin. (Do this by cutting the potato in half lengthways, then in half again, and keep doing this with each part until you get a number of wedges!)
4. Take out the oiled try, and place the potato wedges on, turning over so coated in the oil.
5. Cover with a sprinkled of season-all or some salt, pepper, paprika etc. followed by some dried mixed herbs.
6. Bake in the oven for around 45 minutes, or until golden brown, crisp and soft in the middle!

Lasagne

 This is the perfect comfort food now we're getting into the winter months. This is just a standard lasagne recipe, nothing special, just absolutely delicious pasta, mince, sauce and cheese! It takes a fair bit of time but it is definitely worth it and this made enough for two huge portions for my boyfriend and I, plus 3 extra meals for me to freeze for other dinners - yipee! I served this with some make-shift garlic bread - my mum bought me up some home made soda bread which is yummy on it's own, but we made some garlic butter (just melted butter and crushed fresh garlic, believe it or not) and spread it on top and baked in the oven, mm mm.

Serves 4-5
- 500g lean beef mince
- 2 red onions, chopped
- 2 garlic cloves, crushed
- 2 red peppers, chopped
- handful of mushrooms, sliced
- 1 tin of chopped tomatoes
- 1/4 a jar of tomato pasta sauce (or more chopped tomatoes)
- handful of cherry tomatoes
- dried mixed herbs (basil, oregano, parsley etc.)
- pack of dried lasagne sheets
- 25g butter
- 25g flour (plain or self raising)
- 500ml milk
- generous handful of cheddar cheese, grated

1. Brown the mince in a large pan, then add the onion and garlic, cooking until softened. Add the peppers and the mushrooms, and cook for another few minutes.
2. Pour in the chopped tomatoes and bring to the boil, then simmer. Pre-heat the oven to 180 degrees / gas mark
3. Spoon some tomato pasta sauce in the bottom of some baking dishes and place some lasagne sheets on top. Put a layer of the mince mixture on top then layer with some more lasagne sheets.
4. Meanwhile, to make the bechamel sauce, melt the butter in a pan and stir in the flour. Gradually add in the milk, stirring constantly until thickened. This can take up to 20 minutes - be patient and just keep stirring, it will be worth it!
5. On top of the pasta sheets place another layer of mince, followed by some bechamel sauce. Finish with a final layer of lasagne sheets, followed by bechamel sauce and lots of cheddar
6. Bake in the oven for around 45 minutes, or until piping hot, the pasta is soft and the top is golden brown.

Honey and lemon glazed chicken

I found this recipe in my friends cookbook (Good food 101 cheap eats) which was perfect since I'd just bought 4 chicken drumsticks in Sainsbury's (for only £1!) I don't like citrus but I love lemon in sauces and this makes a perfect sticky glaze over the chicken and potato wedges. It has amazing flavour - you can taste the lemon, the honey and the garlic all at the same time. It's so quick and easy to do, you just make the sauce and bung it all in the oven for 45 minutes. The sauce makes the chicken so moist and the wedges soft - I transferred the wedges to a clean baking tray 15 minutes before the end of the cooking time to crisp up. This is a really good student meal if you want something a bit more special and tasty, yet chicken and potato are still cheap to buy in the supermarket. The original recipe used fresh rosemary, but I didn't want to buy a whole bunch so just used dried mixed herbs instead.

Serves 1
- 2 chicken drumsticks
- 1 large baking potato, cut into wedge shapes
- 25g salted butter
- 2 tbsp runny honey
- 1/2 large lemon
- 1 clove of garlic, crushed
- sprinkling of dried mixed herbs
- fresh spinach leaves, to serve

1. Pre-heat the oven to 200 degrees / gas mark 6
2. Place the chicken drumsticks and wedges in a deep baking tray
3. For the sauce, melt the butter in a pan and add the honey. Squeeze the juice of the lemon and add along with 3/4 of the crushed garlic clove (you can use the whole clove but it will be quite strong). Add some dried mixed herbs and stir together.
4. Drizzle the sauce all over the chicken and potato, turning everything until coated. Sprinkle with some more herbs then bake in the oven for around 30 minutes. Turn the chicken drumsticks and remove the wedges from the pan onto a clean baking tray so they can crisp up. Cook for a further 15 minutes or until the wedges are soft.
5. Serve with fresh spinach leaves or vegetables of your choice

Stuffed red peppers

I made these with the stuffed mushrooms - I love meals like this, I just think it's a really good way to eat the vegetable as opposed to just having them chopped up in something - it's much more interesting and you actually get the flavour of the pepper. I made a simple tomato and basil risotto to go inside and then just topped it off with lots of cheddar cheese!

Serves 2
- 1 large red pepper, cut in half
- olive oil
- 1/2 vegetable stock cube with 300ml water
- 125g rice
- cherry tomatoes, quartered
- basil leaves, torn
- cheddar cheese, grated

1. Pre-heat the oven to gas mark 4 / 180 degrees, and remove the seeds from the pepper.
2. Brush the pepper halves with olive oil and place on a baking tray.
3. Meanwhile, to make the risotto, prepare the stock and pour into a pan, bringing to the boil. Add the rice and cook over a moderate heat for 15-20 minutes, or until the water is absorbed and the rice is soft to taste. (You can always add more water)
4. Add the tomatoes and basil to the rice, and stir, heating for a few minutes.
5. Stuff the pepper halves with the risotto and grate lots of cheddar cheese on top.
6. Bake in the oven for 20-30 minutes, or until the pepper is softened and the cheese is melted.

Beef cannelloni

Although this dish never looks particularly appetising (hard to dish up neatly!) it is absolutely delicious. Fairly similar to lasagne but much more fun to make and more delicious in my opinion. Cannelloni is pasta tubes (or lasagne sheets rolled up) stuffed with a filling - in this recipe it is mince and onion, but spinach and ricotta is also very popular, and vegetarian. I then used a passata to cover the tubes in a dish, and made a bechamel sauce to finish, with lots of cheddar cheese of course. This is a real comfort food treat, and I guarantee you will love it! I served this on a bed of spinach leaves with sun-dried tomato flat bread. Mm mm.

Serves 3-4
- drizzle of olive oil
- 500g beef mince
- 3 cloves of garlic, crushed
- 2 small red onions, chopped
- pinch of mixed dried italian herbs
- large jar of passata
- salt and pepper
- handful of fresh basil, torn
- handful of cherry tomatoes, quartered
- 1 egg, beaten (for binding)
- cannelloni tubes (about 12)
(For bechamel sauce)
- 25g butter
- 25g plain flour
- 300ml milk
- lots of cheddar cheese, grated
- spinach and cherry tomatoes, to serve

1. Heat the olive oil in a pan and brown the mince, with the garlic, onion and dried herbs. Once cooked, set aside to cool.
2. In a bowl, mix the passata with the salt and pepper, fresh basil, and cherry tomatoes. Set aside.

3. Grease a large baking dish with oil and pre-heat the oven to 200 degrees.
4. Once the mince mixture is cool enough to handle, mix with the beaten head and stuff the pasta tubes. Warning - this can be tricky and messy - the key is to stuff them quite full so the mixture is stuck together. Place the cannelloni tubes in the dish
5. Pour over the passata until the pasta is covered.
6. Next, make the bechamel sauce. Heat the butter in a pan, and once frothing, stir in the flour. Stir for about a minute, then very gradually add in the milk, stirring constantly. This can take around 20 minutes to thicken over a low heat but it is worth being patient because a white sauce can go wrong so easily.
7. Once the sauce is thick enough to coat the back of the spoon, pour over the top of the passata covered pasta tubes, and top with lots of grated cheddar.
8. Cover with foil and bake in the oven for 20-30 minutes. Then, remove the foil and cook for a further 20 minutes or until golden brown and the pasta is soft.
9. Serve on a bed of fresh spinach leaves, with cherry tomatoes.

Crispy chicken thighs with red pesto spaghetti

Sun-dried tomato pesto, cream, mushrooms, onions, fresh basil, cherry tomatoes, parmesan - coating spaghetti on a bed of spinach leaves, with parmesan crusted chicken. Mmmmm. Chicken thighs can be quite difficult to eat since these ones had the bones still in, but I actually prefer having a chunk of meat with pasta, rather than it being chopped up inside (unless it's a pasta bake). I used chicken thighs because they still have the skin on and I love the crispy texture with the moist chicken. This is one of my perfect meals since I'm obsessed with pesto and pasta!

Serves 2
- 4 chicken thighs
- olive oil
- salt & pepper
- dried italian herbs
- parmesan, grated
- 180g spaghetti
- 1 red onion, chopped
- handful of mushrooms, sliced
- handful of cherry tomatoes, quartered and some left whole
- 1/2 jar of red pesto (sun-dried tomato)
- dash of cream
- fresh basil, torn
- handful of spinach leaves


1. Pre-heat the oven to gas mark 7. Cut slits in the layer of fat on the chicken thighs - this will help it crisp up.
2. Brush with olive oil, season, sprinkle with herbs and grated parmesan.
3. Bake in the oven for 35 - 45 minutes - cover with foil for the first half of the cooking time!
4. Meanwhile, cook the spaghetti according to packet instructions, and in a separate pan, fry the onions in some olive oil.
5. When softened, add the mushrooms and cherry tomatoes, and continue to fry.
6. Place some tomatoes in with the chicken for the remaining 5 minutes of the cooking time.
7. Once the pasta is cooked, drain and return to the pan. Stir in the onions and mushrooms, and add the pesto and cream, stirring and tossing until coated. Add some fresh basil.
8. Place the spinach leaves in two bowls/plates and serve the spaghetti on top. Top with the chicken thighs and tomatoes. Garnish with some fresh basil and parmesan.
