Apple and Cinnamon Muffins

These are a little bit of heaven. They smell and taste just like autumn - you've got soft apple chunks, 'chewy' dried cranberries, crunchy pumpkin seeds and the warming cinnamon flavour. These muffins are perfect for this time of year - they are super moist and crisp on top just the way I like them. They kind of taste like Starbucks pumpkin spiced lattes which are so yummy, I think it must just be the cinnamon. These are honestly one of my favourite baking creations to date, I will be coming back to this recipe every autumn now. If you make them please have one straight from the oven for me! mm mm

Makes 8 muffins
- 200g plain flour
- 50g soft brown sugar (plus extra for the topping)
- 100g caster sugar
- 2 1/2 tsp baking powder
- pinch of salt
- 2 tsp ground cinnamon (plus extra for the topping)
- 100ml milk
- 80ml sunflower oil
- 1 large egg, beaten
- few drops of vanilla essence
- 1 large cooking apple, peeled, cored and chopped
- 75g dried cranberries
- 50-75g pumpkin seeds (optional)

1. Pre-heat the oven to 200 degrees / gas mark 6.
2. Mix together all the dried ingredients in a large mixing bowl (flour, sugars, baking powder, salt and cinnamon)
3. In a jug, mix together the milk, oil and beaten egg until combined.
4. Gradually stir in the mixture in the jug into the dry ingredients until combined, then add in the apple chunks and mix together.
5. Next, stir in the dried cranberries and pumpkin seeds, if using, and mix until well combined.
6. Line a muffin tin with muffin cases and spoon the mixture into them.
7. Fill them quite full, then place in the oven for around 20 minutes or until golden grown on top.
8. When they are done, take them out of the oven but leave them in the tray for a few minutes while you mix together some brown sugar and ground cinnamon in a small bowl, for the topping.
9. Sprinkle the sugar and cinnamon mixture over the top of each muffin whilst still hot, this just makes them look nicer and gives extra flavour and sweetness! Place on a wired tray to cool or enjoy warm from the oven.
I accidentally ate one when it was hot out of the oven (don't worry, it was a mis-shapen one because it didn't fit in the muffin tray). It was so delicious - this is what it looked like inside, of course the other muffins looked better because they weren't flat and squished.

Enjoy :)

Chicken, chorizo & potato bake

This is a new mid-week favourite of mine - super delicious, quick and easy but different to anything else I usually have. Definitely one for you all to try as it has tons of strong flavours and the crisp texture from the roasted potatoes compliments the soft chicken and chewy chorizo perfectly. The best part is, everything cooks together in one roasting tin!

Serves 2

- 250g new potatoes
- olive oil
- 4 chicken thigh fillets (skinless & boneless)
- 1 tsp paprika
- sprinkle of ground cinnamon
- sprinkle of dried thyme or mixed herbs
- dried chorizo sausage, sliced
- 75g cherry tomatoes, halved
- 1 garlic clove, crushed

1. Pre-heat the oven to 200 degrees.
2. Halve or quarter the new potatoes and toss with plenty of olive oil in a baking tin/tray and season. Place in the oven for about 15 minutes while you prepare the rest of the ingredients.
3. Cut the chicken thigh fillets in half and place them in a bowl. Add the paprika, cinnamon and herbs and stir until the chicken is coated.
4. Take the potatoes out of the oven and place the chicken in the tray around them. Scatter the chorizo,  tomatoes and fresh garlic around the chicken and potatoes as well and place in the oven after seasoning and sprinkling with some more herbs.
5. Cook in the oven for a further 20 minutes, or until the chicken is cooked and the potatoes crisp.

Enjoy :)

Moroccan chicken

This is a dish my dad used to make years ago - I only just remembered it and how delicious it was so  had to get the recipe from him straight away. I'm not a fan of spicy food or coriander therefore most Indian or Moroccan recipes I have to adapt or I just tend not to try them which is a shame. The reason I love this one so much is because it isn't spicy at all but still has incredible flavour from the chicken thighs, cinnamon and sweet apricots. The sweet with savoury in this dish works perfectly together and the light, fluffy cous cous is perfect with the sauce. As I've sad before, I love cooking with chicken thighs because they're so moist and tender. The other good thing about this recipe is that it's really quick to make but it still tastes like a special meal that someone's slaved over for hours...
Serves 2
- 4 boneless and skinless chicken thighs, cut in half
- 2 cloves of garlic, crushed
- 1 onion, chopped
- 75g dried apricots, quartered
- 1 tsp ground cinnamon
- 300ml chicken stock
- 1 tsp turmeric
- lemon juice
- cous cous, to serve

1. Fry the chicken thighs in olive oil for 5-10 minutes, or until browned on both sides.
2. Add the garlic and onion and cook for a further 5 minutes.
3. Add in the apricots and cinnamon and stir.
4. Mix the turmeric into the prepared chicken stock and pour into the pan.
5. Bring to the boil, then cook for about 10-15 minutes.
6. Remove the chicken thighs and set aside, keeping hot.
7. Raise the heat and reduce the sauce until it is fairly thick and syrupy.
8. Meanwhile, cook the cous cous according to packet instructions.
9. Add the lemon juice to the sauce, then serve up the cous cous, with the chicken thighs placed on top, and pour over the sauce. Serve immediately.

Enjoy :)

Apple and plum crumble

Firstly, sorry for the bad photo quality - if you read my welcome back post it explains why and I will put more effort into making them more appealing! This was a delicious dessert, perfect for a winter evening. I'm not a huge crumble fan but I do love it every once in a while and it's a lot of fun to make.

Serves 2-3
- 400g apples, peeled, cored and slices
- 400g plums, stones removed and quartered
- 100g demerara/brown sugar
- 1 tsp ground cinnamon
- 2 tbsp water (add more if needed)

- 75g butter
- 150g self raising flour
- 100g brown sugar

1. To make the filling, add the apples, plums, sugar, cinnamon and water to a pan and cook over a low heat, stirring occasionally, for 20-30 minutes, are until stewed. Spoon into a baking dish.
2. Pre-heat the oven to 180 degrees.
3. To make the crumble topping, simply rub together the butter and flour with your fingertips until it resembles breadcrumbs, then mix in the sugar.
4. Press down the crumble topping onto the fruit until compact. Bake in the oven for around 20 minutes, or until hot in the middle and golden brown - serve warm with cream!

Enjoy :)

Pasticcio

Sorry for this unappetising picture - camera quality isn't great and I always find pasta bakes impossible to present nicely - especially when I'm starving and want to eat it quickly! My dad has made this in the past and I loved it - it's a Greek dish since it has cinnamon and greek yogurt in it which gives it that warming but fresh flavour. It's really comforting as it's pasta and mince, and the tomatoes and yogurt/egg topping almost make an omelette like texture on top. I can't really describe this dish in a way that does it justice, it's a very different pasta dish but in a oh-my-god-why-haven't-I-tried-this-before way! It's a lot more simple than other pasta bakes like lasagne as there is no slaving over the pan trying to make the perfect bechamel sauce. Although this takes a long time simmering and baking in the oven, it is easier than most other dishes and is worth it - you won't be disappointed.

Serves 4
- 1 tbsp olive oil
- 1 onion, chopped
- 2 garlic cloves, crushed
- 450g lamb mince
- 2 tbsp tomato purée
- 2 tbsp plain flour
- 300ml chicken stock
- 1 tsp ground cinnamon
- 200g dried macaroni
- 2 beef tomatoes, sliced
- 300ml Greek yogurt
- 2 eggs, beaten
- handful of cheddar, grated

1. Preheat the oven to 190 degrees. Heat the oil in a large pan and soften the onion and garlic. Add the lamb mince, breaking it up with a wooden spoon and cook until browned all over.
2. Stir in the tomato purée and the flour, cooking for 1 minute, then add the chicken stock and the cinnamon. Bring to the boil, then reduce the heat and cover for around 25 minutes, stirring occasionally.
3. Meanwhile, cook the macaroni according to packet instructions in salted water. When cooked, drain, and add the pasta to the mince mixture.
4. Spoon into a large ovenproof dish.
5. Arrange the tomato slices on top
6. Mix the yogurt with the eggs then spoon over the top evenly, and sprinkle with cheese.
7. Bake in the pre-heated oven for around 45 minutes.
Enjoy :)

Carrot cake cupcakes

I hadn’t tried carrot cake until the other week and I fell in love with it. I don’t really like nuts or citrus which are all things I thought the cake would taste of but it didn't at all. I decided to make my own mini versions and they worked really well – they are really moist and warming from the cinnamon, and have great texture from the occasional crunch of walnut and soft sultanas. The frosting is to die for and compliments the flavours in the sponge so well. The carrots on top are white chocolate cake decorations from Sainsbury’s. You could also decorate them with walnuts or chocolate mini eggs for Easter time. If you like that citrus twang, then feel free to add some orange zest into the cake mix or the frosting! This recipe will be appearing in my uni newspaper - Redbrick, yay so if you're at the university of Birmingham make sure you pick it up!

*Just a quick apology for the infrequency of posts - I'm busy at uni and my laptops been playing up. I've got lots of posts I want to do though so keep checking back! I really appreciate everyone who looks at my blog*

Makes about 12 cupcakes
275g caster sugar
50g margarine
150ml sunflower or olive oil
4 medium eggs
4 carrots, grated
50g walnuts, finely chopped
50g sultanas, finely chopped
225g self-raising flour
2 tsp baking powder
2 tsp ground cinnamon
1 tbsp cocoa powder

For the cream cheese frosting:
125g butter, softened
125g cream cheese
275g icing sugar

1.       Pre-heat the oven to 180 degrees / gas mark 4. Line a muffin tray with 12 muffin cases.
2.       Mix together the sugar, margarine and oil in a large mixing bowl. Beat in the eggs then stir in the grated carrot, walnuts, and sultanas.
3.        Sieve the flour and baking powder, cinnamon and cocoa powder into the carrot mixture and stir well until combined.
4.       Spoon this mixture into the muffin cases (about 2/3 full) and bake for around 25 minutes. Leave to cool on a wired rack.
5.       To make the frosting, whisk together the butter and cream cheese until smooth.
6.       Add the icing sugar, stirring until combined and smooth. Spoon on to the cupcakes and smooth over with a knife. Decorate as you wish!

Moroccan Lamb

I made this meal a few weeks ago in an attempt to make two lamb steaks a bit more interesting. I looked up various Moroccan lamb recipes and most of them were slow cooked and different cuts of meat so I had to make quite a few adjustments. I nearly always use smell to decide what I should put with what, and this is especially important when adding spices in this dish, but I had a blocked nose at the time so cooking this was a bit of a nightmare. It also meant I couldn't really taste it  very well when eating it - all I know is that it was very hot in my mouth (spicy hot), but I am a massive wimp when it comes to spice so if you enjoy spicy food this will probably seem very mild. My mum said it had a lovely flavour so I'm trusting her and sharing this with you guys! The honey and apricots will add a sweetness to counteract the spice, which will go perfectly with the warm cinnamon and tomato flavours.

Serves 2
- 2 lamb steaks
- olive oil
- 1 tsp cayenne pepper
- 1/2 tbsp paprika
- 1/2 tbsp ground ginger
- 2 tsp cinnamon
- 1/2 tbsp turmeric
- 1 onion, chopped
- 2 cloves of garlic, chopped
- 400g tin chopped tomatoes
- 300ml lamb/beef stock
- handful of dried apricots, quartered
- 1 tbsp runny honey
- handful of pine nuts
- handful of parsley, chopped

1. Pre-heat the oven to gas mark 3 / 160 degrees. Rub oil on the lamb steaks.
2. In a dish, combine all the spices, and rub the lamb steaks in the mixture until coated. Keep in the fridge for half an hour.
3. Fry the onion and garlic in a large pan until soft. Add the lamb steaks, browning each side. Then, add the tinned tomatoes and stock, and bring to the boil. Simmer for about 20 minutes or until the liquid has started to reduce.
4. Next, add the apricots, pine nuts, honey and parsley and stir.
5. Return the mixture into the dish and cover with foil. Cook in the oven for about an hour, or until the meat is tender and the sauce reduced. Serve with rice and vegetables!
Enjoy :)

Low fat blueberry muffins

So the one's I baked were incredibly low fat since I forgot to put margarine in... As you can imagine I was extremely annoyed remembering I didn't put any in when they were 5 minutes away from being done in the oven! I tried one straight from the oven (always best when they're warm) and it was still delicious, soft on the inside, crisp on top and a lovely fruity flavour along with warm cinnamon flavours - mmm! However, they were stuck to the paper cases which I presume may not have been so bad if there was more fat in there (from the marg). I also think they would be more moist with marg in as well, so of course, don't be silly like me and forget to put it in! What I particularly love about these is the golden colour from the sprinkling of sugar and spices before baking in the oven.

Makes 6 muffins
- 115g plain flour
- 1/2 tsp bicarbonate of soda
- pinch of salt
- 1/2 tsp mixed spice (or just cinnamon)
- 55g caster sugar
- 1 egg
- 1.5 tbsp low-fat margarine
- 75ml (5 tbsp) low-fat natural yogurt
- 1/2 tsp vanilla extract
- 40g fresh blueberries

1. Pre-heat the oven to gas mark 5/190 degrees. Place 6 muffin cases in a muffin tin.
2. Sift the flour, bicarb of soda, salt and half the mixed spice into a mixing bowl. Add 6 tbsp of the sugar and mix together well.
3. In a separate bowl, whisk the egg, margarine, yogurt and vanilla extract. Stir in the blueberries then pour the mixture into the dry ingredients. Gently stir until combined.
4. Divide the mixture into the muffin cases (about 2/3 full). Sprinkle over the remaining sugar and some mixed spice over the muffins.
5. Bake in the oven for around 20 minutes, or until well-risen and golden brown. Cool on a wire rack. Best eaten warm!

Enjoy :)

Nutritious breakfast

One thing you need to know is that i LOVE eggs! I will usually have them soft boiled on wholemeal and/or seeded toast, but they're amazing on english muffins for a treat. The reason I usually choose soft-boiled is because i love how they can taste so creamy and rich, particularly from the yolk, without anything extra - no oil, no butter; just good old eggs boiled in water! It can be, however, difficult to time them to the right amount of boiled that you like, and difficult to peel them when they're soft.
Scrambled egg also make a nutritious breakfast - combine with skimmed milk, some margarine and some herbs mmm.

I try to alternate between having eggs one morning and cereal the next, as the yolk is fairly fatty and contains cholesterol, although i'm sure eggs have more health benefits than drawbacks so i don't worry too much about this.
I stay away from sugary cereal and try to stick to filling whole wheat or bran ones like branflakes or shredded wheat. I have noticed recently, however, than branflakes are quite high in sugar. I therefore bought cornflakes the other day which are low in sugar but have noticed that they don't fill me up nearly as much (i guess cause they're corn and not bran?) I also love special k but can get a bit addicted to it!
I have my cereal with skimmed milk because to me it tastes the same as semi with cereal, and it's less fat so win win! In the case of shredded wheat though, for some reason i only like that heated up in the microwave with milk and honey mm.

I really want to get into porridge in the near future as it is so filling, and warming especially in winter. I would probably vary making it with water or skimmed milk depending on what flavours i was adding, if any.

I love cinnamon sprinkled on things, and in porridge it would be delicious - maybe even with chunks of warm apple in as well.

I am a huge fan of honey which would work perfectly with porridge but i get a bit carried away with it (i love it with everything...) and would have to be careful not to make it too sugary, as it defeats the point of the healthy, nutritious breakfast.

I would definitely recommend buying plain porridge oats rather than the ready flavoured ones - like Quakers cinnamon or golden syrup etc. It would work out far cheaper to buy plain and add your own flavours, and that way you can mix it up daily instead of having to use up a dozen of the same flavours.

Other flavours I would want to try would be slicing bananas with it, adding blueberries, or sweetened dried fruits like cranberries or raisins.

If you are on a healthy diet I would recommend putting as much effort into breakfast as possible as it really should be the most nutritious and filling meal of the day - it starts off your metabolism for the day which is key for tackling any weight loss.

Just having fruit would not be enough for breakfast, but if you really want to block out carbs (which isn't the best idea...) then i would suggest teaming the fruit with some low fat natural yogurt, which is delicious and you can add so many flavours! Likewise if you want to make a smoothie make sure it consists of fruit like berries and a more satisfying fruit like banana to thicken, as well as low fat yogurt or milk, maybe some fruit juice, and adding oats in to keep you full for longer is also a good idea!

Anyway, i will definitely be doing more specific posts on natural yogurt and smoothies in the future because yogurt is one of my favourite healthy night time snacks, especially with blueberries and cinnamon.

Hope you start your day in a satisfying, healthy and delicious way :)
