Patatas bravas with chorizo

You can't have tapas without crispy, well-seasoned, fried potatoes smothered in a rich, smoky tomato sauce - or patatas bravas as it is known! The perfect side dish to a main meal or just one of many tapas dishes.
 Feel free to add spices or hot paprika to this recipe - I am not a huge fan of spicy food so that is why this recipe won't be particularly 'hot'. The chorizo I bought was quite spicy so that's what gave this dish flavour.
With hardly any ingredients, this is really easy to whip up, especially in advance as it can be oven-baked later on to heat through - perfect for dinner parties or as part of a tapas buffet!

Serves 2
- 2 baking potatoes
- olive oil
- seasoning (paprika, dried herbs, pepper, spices etc)
- 1/2 ring of chorizo, sliced
- tin/carton of chopped tomatoes (I used the Sainsbury's one with olive oil & garlic in)
- parsley, to garnish

1. Peel the potatoes and chop them into small cubes. Bring a pan of water to the boil and par-boil the potato cubes for 5 minutes, then drain.
2. In a large frying pan, heat a generous amount of olive oil to fry the potatoes in. Put on a high heat, add the potatoes, and generously sprinkle with whatever seasoning you prefer. Fry in the hot oil for about 15 minutes, frequently tossing the pan to evenly fry and coat in the oil and seasoning. They should be soft in the middle and crispy on the outside when finished.
3. Meanwhile, in a saucepan, heat the chopped tomatoes and stir in the chorizo. Cook on a high heat until the tomatoes have reduced and the sauce is quite thick.
4. When cooked, stir the potatoes into the sauce then serve in individual dishes ready to eat straight away or to be re-heated later.

Sweet potato fries

 I made some 'tapas' dishes this weekend (well, my version of tapas) which included these honey glazed sweet potato fries which were the star of the show. Super easy to make and taste delicious.
Perfect dipped in garlic mayonnaise, tzatziki, and salsa (on separate dippings of course!)

Serves 2
- 1 large sweet potato
- olive oil
- seasoning (salt, pepper, paprika, dried herbs etc.)
- squeezy honey

1. Pre-heat the oven to 200 degrees and place a baking tray with a generous amount of olive oil inside.
2. Peel the sweet potato and slice into thin chip shapes, or wedges if you prefer.
3. Take the tray out of the oven when the oil is heated and place the chips in the hot oil, turning and shaking to make sure they're evenly coated (drizzle extra oil on top of needed!)
4. Sprinkle on some seasoning and drizzle honey over the top. Place in the oven and bake for 20-30 minutes, checking and turning half way through.
5. Check that they are soft in the middle, then remove from the oven and pour the chips out onto some kitchen roll, and dab with more kitchen roll to remove any excess oil. Leave to cool for a few minutes, then serve!

Beef casserole & roast potatoes

A hearty beef casserole to warm you up through the cold weather
Perfect with some crispy-bottomed roasties
Serves 2-3

For the casserole
- olive oil
- 1 large onion, thickly chopped
- 1 clove of garlic, chopped
- 450g casserole steak, chopped
- plain flour
- salt & pepper
- 2 carrots, chopped
- 2 tbsp worcestershire sauce
- 400ml beef stock
- 100g mushrooms, chopped
- sprigs of fresh thyme

For the roast potatoes
- maris piper or king edward potatoes, halved or quartered
- olive oil
- seasoning (spice & herb blend or whatever you like)

1. Pre-heat the oven to 180 degrees.
2. In a large pan, fry the onion and garlic in a generous amount of olive oil for a few minutes. Then add the beef, a sprinkling of flour and seasoning and stiry to combine, cooking for a few more minutes.
3. Next add the carrots, then the best ingredient
4. And the beef stock. Bring to the boil, then simmer.
5. Add the mushrooms and fresh sprigs of thyme, then transfer to a casserole dish with a lid, and cook in the oven for about two hours (stirring halfway through). 
6. Meanwhile, while the casserole is cooking, for the roast potatoes, prepare as many as you wish (depending on your appetite) and par-boil in salted water for around 10-15 minutes.
7. Drain and place on kitchen paper, leaving to cool and dry out for 20-30 minutes.
8. Pour a generous amount of oil into a roasting tin and place in the oven, turning it up to 200 degrees, until the oil has heated up.
9. Remove the tray from the oven and transfer the potatoes into the dish, coating in the hot oil. Season well and then roast in the oven for around 40 minutes, or until crisped to your likening.
10. By the end of the two hours, your casserole should be thicker (add cornflour if not) and ready to serve, accompanied by roasties that are fluffy in the middle, and crisp on the outside.

Chicken, chorizo & potato bake

This is a new mid-week favourite of mine - super delicious, quick and easy but different to anything else I usually have. Definitely one for you all to try as it has tons of strong flavours and the crisp texture from the roasted potatoes compliments the soft chicken and chewy chorizo perfectly. The best part is, everything cooks together in one roasting tin!

Serves 2 

- 250g new potatoes
- olive oil
- 4 chicken thigh fillets (skinless & boneless)
- 1 tsp paprika 
- sprinkle of ground cinnamon
- sprinkle of dried thyme or mixed herbs
- dried chorizo sausage, sliced
- 75g cherry tomatoes, halved
- 1 garlic clove, crushed

1. Pre-heat the oven to 200 degrees.
2. Halve or quarter the new potatoes and toss with plenty of olive oil in a baking tin/tray and season. Place in the oven for about 15 minutes while you prepare the rest of the ingredients.
3. Cut the chicken thigh fillets in half and place them in a bowl. Add the paprika, cinnamon and herbs and stir until the chicken is coated.
4. Take the potatoes out of the oven and place the chicken in the tray around them. Scatter the chorizo,  tomatoes and fresh garlic around the chicken and potatoes as well and place in the oven after seasoning and sprinkling with some more herbs.
5. Cook in the oven for a further 20 minutes, or until the chicken is cooked and the potatoes crisp.

Creamy fish pie

I made this a few months ago after wanting to try it for ages, since I'd never even had a fish pie before! It was just as good as i'd expected - creamy and smooth with a lot of flavour and delicious mashed potato with a crispy, cheesy layer. Perfect comfort food!

Serves 6
- 800g potatoes, peeled and chopped
- 25g butter (+ extra for potatoes)
- 25g plain flour
- 400ml milk (+ extra for potatoes)
- 100ml double cream
- around 600g fish - salmon, haddock and white fish (pollock or cod)
I bought Sainsbury's fish pie mix which is salmon, haddock and pollock ready skinned and cubed
- bunch of fresh parsley, chopped
- generous amount of cheddar cheese, grated

1. Boil the potatoes according to packet instructions.
2. Pre-heat the oven to 190 degrees.
3. Meanwhile, melt the butter in a saucepan and stir in the flour. Gradually add the milk, stirring constantly, to make a smooth white sauce.
4. When thickened, stir in 75ml of the cream and season with salt and pepper. Mix in half the parsley.
5. Place the fish at the bottom of an ovenproof dish. Scatter over the remaining parsley then pour the white sauce on top.
6. When the potatoes are cooked and soft, mash them until smooth with butter, milk and the remaining cream.
7. Spread a layer of mashed potato on the top and fluff up with a fork.
8. Finish with a very generous layer of cheddar cheese and cook in the oven for 30 minutes (half covered with foil, half without) or until golden and the fish is cooked.

Quick sausage casserole

This is just a really simple but good recipe I got from a student cookbook. It's a perfect student or family meal as it is fairly inexpensive, using mainly store-cupboard ingredients, and is very satisfying and warming for the upcoming colder months! This recipe made enough for 3 big portions - the first time I had it we had mash with it, and the second time I served it on a jacket potato with green veg. In the recipe it says just to used baked beans but I wanted more types of beans so instead of using cannellini as well I bought the new Heinz 'five beans' which has the normal baked bean in plus kidney, cannellini and 2 others. I definitely recommend doing this!

Serves 4
- 6 sausages
- 1 onion, chopped
- 2 green peppers, chopped
- tin of chopped tomatoes
- tin of Heinz five beans

1. Fry the sausages in some oil until browned, then set aside.
2. In the same pan, fry the onion and pepper until soft. Add the chopped tomatoes and bring to the boil then simmer.
3. Cut up the sausages and add back to the pan, followed by the baked beans. Stir and heat through for a few minutes.
4. Serve with anything you like - mash, wedges, jacket potato, or even rice or pasta!

Honey and lemon glazed chicken

I found this recipe in my friends cookbook (Good food 101 cheap eats) which was perfect since I'd just bought 4 chicken drumsticks in Sainsbury's (for only £1!) I don't like citrus but I love lemon in sauces and this makes a perfect sticky glaze over the chicken and potato wedges. It has amazing flavour - you can taste the lemon, the honey and the garlic all at the same time. It's so quick and easy to do, you just make the sauce and bung it all in the oven for 45 minutes. The sauce makes the chicken so moist and the wedges soft - I transferred the wedges to a clean baking tray 15 minutes before the end of the cooking time to crisp up. This is a really good student meal if you want something a bit more special and tasty, yet chicken and potato are still cheap to buy in the supermarket. The original recipe used fresh rosemary, but I didn't want to buy a whole bunch so just used dried mixed herbs instead.

Serves 1
- 2 chicken drumsticks
- 1 large baking potato, cut into wedge shapes
- 25g salted butter
- 2 tbsp runny honey
- 1/2 large lemon
- 1 clove of garlic, crushed
- sprinkling of dried mixed herbs
- fresh spinach leaves, to serve

1. Pre-heat the oven to 200 degrees / gas mark 6
2. Place the chicken drumsticks and wedges in a deep baking tray
3. For the sauce, melt the butter in a pan and add the honey. Squeeze the juice of the lemon and add along with 3/4 of the crushed garlic clove (you can use the whole clove but it will be quite strong). Add some dried mixed herbs and stir together.
4. Drizzle the sauce all over the chicken and potato, turning everything until coated. Sprinkle with some more herbs then bake in the oven for around 30 minutes. Turn the chicken drumsticks and remove the wedges from the pan onto a clean baking tray so they can crisp up. Cook for a further 15 minutes or until the wedges are soft.
5. Serve with fresh spinach leaves or vegetables of your choice

Leek and potato soup with brie

Another wintery recipe - sorry I know it's only August! I had all the ingredients for this in the house and had never really made soup before so I was really excited to try it out. I didn't expect the texture to be so thick and smooth so was really pleased and it tasted so creamy and delicious! If you prefer a chunky soup then feel free to alter the recipe slightly - you don't have to blend it in a food processor, you could just chop the potatoes smaller to begin with. This tasted great on it's own, but once I added a few chunks of brie it just made it so much better - more creamy mm mm. I served this with a tear and share bread.
Serves 2 
- knob of butter
- 1 onion, chopped
- 2 cloves garlic, crushed
- 1 leek, sliced or chopped
- 1 large baking potato, cut into chunks
- 1 chicken stock cube with 300ml water
- dash of milk
- salt and pepper
- few slices of brie
1. Melt the butter in a saucepan and add the onions, garlic and leek. Cook for around 5 minutes, or until softened. Add the potato.
2. Pour in the stock and bring to the boil. Then cover with a lid, and simmer for 20-30 minutes, or until the potato is softened.
3. Put the soup into a food processor and add some milk. Blend until smooth (a minute or two). Season to taste.
4. Return the soup to the pan to heat through, and add the slices of brie. Stir until melted, then serve!

Chicken and mushroom puff pastry pie

I had been craving a pie for ages; pastry is such a weakness for me, and puff pastry is definitely the most satisfying! I decided to make this creamy, comfort food chicken pie after coming across the recipe in Lisa Faulkner's cookbook (check here for info on her book). However, I altered it in a few ways - her recipe is for pot pies (small individual ones) and I made one large one, I lined the dish with puff pastry so it has a pastry base and topping rather than just topping, I used parsley instead of tarragon, and I didn't use any fennel. It was absolutely delicious, I recommend to anyone who likes pies. I had never made a pastry pie before, and it was exceptionally easy considering you can buy ready-rolled puff pastry! My boyfriend and I both loved it, although it is very rich - I guess this is one of the reasons why in the original recipe it just has a pastry topping rather than the filling being completely encased. I served the pie with creamy, parsley mash (I didn't take a picture of this but will write the recipe down below) and green beans. Mmmm, re-living the amazing taste of the mushrooms and parsley - I cannot wait to make this again!

Serves 4
- 1 tbsp butter
- 1 tbsp olive oil
- 3 medium chicken breasts, chopped
- 3 garlic cloves, crushed
- 1 onion, chopped
- 300g mushrooms, quartered
- 100ml double cream
- 270ml chicken stock
- bunch of fresh parsley, finely chopped
- puff pastry (1 or 2 sheets if just covering top, but 4-6 if lining the dish as well)
- 1 egg, beaten


1. Pre-heat the oven to 200 degrees. Heat the butter and oil in a deep frying pan and fry the chicken until browned. Put aside and return the pan to the heat, adding the garlic and onion, cooking until softened.
2. Add the mushrooms (adding a bit more oil if necessary) and cook until reduced down and softened.
3. Pour in the double cream and prepared stock, and reduce for 5-10 minutes until thickened. Add the cooked chicken, and parsley.
4. Meanwhile, oil a deep baking dish and line it with puff pastry (only one layer thick). You may need to cut different shapes for it to fit round the sides. Pour the chicken and mushroom mixture into the pastry-lined dish.
5. Top with the remaining pastry and brush with the beaten egg - this helps it crisp up, and gives it that gorgeous golden brown colour. If you want you can save some pastry and make shapes to stick on top, my boyfriend made the star! Bake in the oven for 20 minutes, or until hot in the middle and the pastry is crisp and golden.

For parsley mash
- mashing potatoes
- salt
- margarine
- double cream
- fresh parsley, chopped

1. Simply cook the potatoes in a pan of salted water according to packet instructions (20-30 mins)
2. Drain and return to the pan, adding a dollop of margarine and some cream. Mash until smooth - season to taste and add more cream if necessary. Add the parsley and stir through... delicious!

Shepherd's pie

This is a really good shepherd's pie recipe - it has the usual comfort food textures and richness, as well as being packed with tons of flavour from the fresh rosemary. A potato pie like this is a brilliant way to get some veggies in as well without it being daunting (I know that it's always not great to have a pile of veg on the side of your plate, it can be the last thing you want to eat). As a student, when I'm at uni and have less time and space, I tend to buy the Collman's or Schwartz (or Tesco or Sainsbury's equivalents) dried packet mixes where you just add water (as well as the mince, veg, potato etc) - these are also great too for flavour; I will be doing a post soon on a sausage casserole I made using one of these, as well as a post more focussed on meals to cook as a student - a sort of week dinner plan. A typical recipe will make about 3 or 4 good-sized portions so it's great to freeze portions and have them in a few days or weeks, or even months! Having said that about the packet mixes, you cannot beat a hearty home-made shepherd's pie so if you've got the time, I would highly recommend this for a family treat.

Serves 4-6 (I halved this)
- oil, for frying
- 2 medium red onions, chopped
- 3-4 tbsp balsamic vinegar
- 2 carrots, peeled and cut into small cubes
- 2 sprigs of fresh rosemary, finely chopped
- 700-750g lamb mince (you can use beef if you prefer - technically this would make it a cottage pie)
- 2 large squidges of tomato puree
- 3-4 tbsp Worcestershire sauce
- 200ml of lamb or beef stock
- splash of red wine (optional)
- salt & pepper
- 1 bay leaf
- 250g frozen peas
- 1kg mashing potatoes, cut into chunks
- knob of butter
- splash of milk
- large handful of grated cheddar and breadcrumbs, for sprinkling

1. Heat the oil and add the onions, cooking until soft. Add the balsamic and cook until evaporated. Add the carrots and rosemary and stir together. Add the mince, breaking up with a wooden spoon and cook until browned.
2. Preheat the oven to 180 degrees/gas mark 4.
3. Add the tomato puree, Worcestershire sauce, stock, salt & pepper, and the bay leaf, and simmer. Add the peas.
4. Meanwhile, cook the potatoes in a large an of salted water for around 20 minutes, or until soft.
5. Drain them, and return to the an, adding the butter and milk, mashing until smooth.Season according to taste.
6. Tip the meat mixture into a large casserole dish and dollop on the mash, spreading it and forking to make a pattern. Sprinkle on the cheese and the breadcrumbs for a crunchy texture - perfect with the smooth mash.
7. Cook the pie for 20-30 minutes , or until golden on top and hot all the way through.

Pesto mash

This mashed potato was deliciously creamy and rich, despite not having any cream or crème fraiche in. I decided to use pesto because I've had pesto and cheddar on a jacket potato before and it was so yummy, so I knew that it would taste good in mash as well. I served this with chicken wrapped in pancetta (see previous post) and green vegetables. It's amazing that just by adding a few dollops of green pesto, you can transform a boring mash into something delicious and luxurious! You should definitely try this if you like pesto.

Serves 2
- 450-500g potatoes (I used desiree and vivaldi)
- pinch of salt
- dash of semi-skimmed milk
- knob of butter
- 1/2 small jar of green pesto (or less, or more)
- handful of cheddar, grated


1. Boil the potatoes in salted water for 20-25 minutes, or until soft.
2. Drain and return to the pan. Add some milk and a knob of butter and mash for a couple of minutes until smooth.
3. Add the pesto and stir in, then continue to mash - adding more butter and/or milk depending on the taste/texture you desire.
4. Put the cheddar in and continue to mash. Season to taste, and serve.

Oven-baked rosemary & bacon potato rosti

As I was grating all the potatoes I thought to myself, is this really worth it!? For some reason, I had the expectation that this would be watery and bland (even though I seasoned etc.) Boy was I mistaken! This was one of the best potato dishes I've ever had, and definitely the best one I've ever made. I don't think I've ever even had a rosti before - if I have it wasn't memorable. So I was just going to make a traditional rosti and fry them individually, but then I decided to oven-bake one big one so the potato is cooked for about an hour, meaning the result is a soft, creamy inside, and a crisp outside, mmm. I served this with balsamic, rosemary and tomato marinated lamb which complimented it perfectly. I will post the recipe for the lamb over the next couple of days. Who would have thought grated potato would taste so satisfying...

Serves 2-3
Ingredients:
- 3 rashers streaky bacon
- 750g potatoes, peeled (waxy potatoes - I used Sainsburys taste the difference Vivaldi)
- 2 tbsp olive oil
- 1/2 onion
- butter, for greasing and topping
- dried or fresh rosemary, for sprinkling
- handful of parmesan, grated

1. Pre-heat the oven to 190 degrees/gas mark 5. Dry-fry the bacon in a pan until golden and crispy. Cut into pieces once cooled.
2. Boil the potatoes whole for about 5 minutes. Drain and place in cold water.
3. When cool enough to handle, grate the potatoes into a large bowl, occasionally adding olive oil.
4. Finely chop the onion and add to the grated potato along with the bacon.
5. Place a baking tray in the oven to heat. Grease a loose-bottomed cake tin with butter and scatter the potato mix into it. Do not pack it down with your hands. Sprinkle with rosemary and parmesan, and scatter butter over the top. (Picture below is at this stage)
6. Place on top of the baking tray in the oven and bake for 1 to 1 and a half hours - until the potatoes are cooked through and crisp on top.
