Bulgur wheat stuffed pepper

This is an even healthier version of cous cous stuffed pepper, where the cous cous is swapped for bulgur wheat (lower in calories, higher in fibre etc), and goats cheese swapped for spring onions. The flavour is still amazing thanks to the red pesto, sun dried tomatoes, spring onion & parsley, so you really can enjoy a nutritious meal.
Serve with green vegetables or a big handful of fresh spinach leaves!
Serves 1 as a main, or 2 as a starter
- 1 large red pepper
- olive oil- 75g bulgur wheat
- 2 tsp red pesto (I used a Napolina tomato & garlic one)
- salt & pepper
- fresh parsley, chopped
- sun dried tomatoes, chopped
- spring onions, chopped
- 1/2 slice of bread, crumbled

1. Pre-heat the oven to 180 degrees.
2. Cut the red pepper in half and de-pip it. In a baking tray, brush the pepper inside and out with olive oil. Place in the oven for 10 minutes to soften.
3. Meanwhile, cook the bulgur wheat according to packet instructions - on the hob in boiling water for around 15-20 minutes.
4. Remove the peppers from the oven (they should be softer and have a bit of colour).
5. When the bulgur wheat is cooked, stir the pesto, season with salt & pepper, and stir in as many sun dried tomatoes, spring onions and parsley as you wish.
6. Stuff each pepper half with the bulgur wheat mixture, sprinkle with the chunky breadcrumbs then bake in the oven for another 15-20 minutes, or until the pepper is cooked and the breadcrumbs crisp. Serve straight away!

Sun-dried tomato stuffed pepper

A delicious meat-free dish, perfect as a starter or for a healthier mid-week dinner

Serves 1 as a main, or 2 as a starter
- 1 large red pepper
- 60g cous cous
- 2 tsp red pesto (I used a Napolina tomato & garlic one)
- salt & pepper
- dried mixed herbs
- sun dried tomatoes, chopped
- soft goats cheese, crumbled
- 1/2 slice of bread, crumbled
- parsley to garnish

1. Pre-heat the oven to 180 degrees.
2. Cut the red pepper in half and de-pip it. In a baking tray, brush the pepper inside and out with oil from the jar of sun-dried tomatoes (or olive oil). Place in the oven for 10 minutes to soften.
3. Prepare the cous cous according to packet instructions (add boiling water to a bowl of dried cous cous and cover for 5 minutes until soft to the bite and fluffy).
4. Stir the pesto into the cooked cous cous, season with salt & pepper and dried herbs, and stir in as many sun dried tomatoes and as much goats cheese as you wish.
5. Remove the peppers from the oven (they should be softer and have a bit of colour), and stuff each half with the cous cous mixture.
6. Sprinkle with the chunky breadcrumbs then bake in the oven for another 15-20 minutes, or when the pepper is cooked and the breadcrumbs crisp. Garnish with parsley and serve!

Chicken, bacon and pesto pasta bake

Beat the January blues with this deliciously, comforting pasta bake - a great weekend treat as part of your nutritious, healthy start to 2014.
I love the combination of peas and pesto, it works really well and is a perfect way to incorporate vegetables for those who don't like to eat them on their own, and to make a naughty pasta bake a bit more healthy! You can use chicken breasts for this but I prefer chicken thighs as they are so moist and tender.

Serves 2
- 200-250g pasta (I used bows and penne)
- 2 chicken thighs, chopped
- 4 rashers of bacon, chopped
- 1 large red onion, chopped
- 160g frozen peas
- 1/2 jar of basil pesto
- 150ml double cream
- parmesan
- cheddar

1. Pre-heat the oven to 200 degrees.
2. Bring a large pan of water to the boil and cook the pasta according to packet instructions.
3. Meanwhile, in some olive oil, fry the chicken thighs until browned, then add the bacon and cook for a few minute before you add the onion. Cook until the onions are softened.
4. When the pasta is five minutes from being done, add the peas to the same pan of boiling water and cook with the pasta. When ready, drain and set aside.
5. Add the pesto and cream to the chicken and bacon mixture and stir until combined. Then add the pasta and peas, a grating of parmesan, and mix together well.
6. Transfer to an oven proof dish then grate some cheddar and a generous amount of parmesan on top.
7. Cover with foil and bake in the oven for 20-30 minutes, removing the foil if you prefer it crispy on top.

Pasta, pasta, pasta

Just a quick post on three pasta dishes I have made over the last couple months. Two I have posted about before so I will link them below, and one which is pretty simple but delicious.

Carbonara
This is the best carbonara recipe I've ever come across and it turned out even better the second time - just make sure you let the sauce reduce enough! You can find the recipe here

Pesto pasta with salmon and green beans
If you've read my other posts you will know I love pesto pasta - and this is exactly that, with green beans, spinach and salmon which I brushed with olive oil and fresh garlic before baking in the oven (wrapped in foil, 180 degrees) for 20 minutes. Finish it off with lots of fresh parmesan mm mm.

Macaroni cheese
This is the amazing Lisa Faulkner recipe that I've posted about before here. This time I left out the leeks and added a lot more bacon (I made it for my sister and she's very fussy!) This is perfect comfort food for this cold month.

3 simple pasta dishes

Spaghetti bolognese, carbonara, macaroni cheese, and even pasta and pesto can get boring (can't believe I just said that!) so I have come up with 3 really easy pasta meals that taste delicious. They may not be the lowest in fat but they are still fairly nutritious with chicken or tuna, and a variety of different veg. Give them a try - they will not disappoint!

1. Chicken and bacon pasta with garlic and herb cream cheese
This is so delicious, I had this tonight and the flavour is amazing from the smoked bacon and garlic. It was really filling as well and contains a variety of different vegetables. 

Serves 2
- olive oil
- 1 chicken breast, sliced
- 3 rashers of smoked bacon, chopped
- 175g pasta
- 1 onion, chopped
- 1 clove of garlic, crushed
- handful of mushrooms, sliced
- green beans, cut in half
- 1/3 200g pack of garlic and herb Philadelphia cream cheese
- handful of fresh spinach leaves
- sprinkling of cheddar cheese

1. Fry the chicken breast in olive oil until browned, add the bacon and stir for a few minutes.
2. Meanwhile, cook the pasta according to packet instructions.
3. Add the garlic and onion to the bacon and chicken - cook until softened, then add the mushrooms.
4. Add the green beans to the pasta water about 5 minutes till the end of cooking time. Then drain and add to the chicken and bacon pan.
5. Stir in the garlic and herb cream cheese until all coated, and serve on a bed of fresh spinach leaves (or stir them in if you prefer them more wilted) with a sprinkling of cheddar cheese. Voila!

2. Cheesy, tuna pasta
This was a really thrown together meal when I couldn't decide what to have. I had some leftover tuna and mayo that I had in a sandwich the previous day and decided to have this with pasta. This was such a delicious meal but fairly naughty with butter and lots of cheese. Thinking about it, I should have added peas or sweetcorn, or both, to make it a bit more exciting and nutritious. I really love tuna and mushrooms together but for those of you who don't like mushrooms, you don't have to add them!

Serves 1
- 100g pasta
- olive oil
- 1 clove of garlic, crushed
- handful of mushrooms, sliced
- 1/2 tin of tuna mixed with little bit of mayo
- knob of butter
- big handful of cheddar, grated

1. Cook the pasta according to packet instructions.
2. Meanwhile, heat some olive oil and fry the garlic and mushrooms until softened.
3. Stir in the tuna and mayo. Drain the pasta and add to the pan.
4. Stir in the butter and cheese and serve!

3. Creamy pesto pasta
The basis for this recipe came off the campbells condensed, creamy chicken soup tin! It is just a more interesting way to enjoy pesto, since it's really creamy and comforting. I decided to add peas and onion as well, and I used turkey instead of chicken.

Serves 2
- 175g pasta
- 1 chicken/turkey breast, chopped
- 1 onion, chopped
- 1 tin of campbells condensed cream of chicken soup
- 120ml milk
- 1/2 jar of green pesto
- peas
- cheddar cheese, grated

1. Cook the pasta according to packet instructions.
2. Fry the chicken and onion in some olive oil then add the soup and milk, stirring. Bring to the boil then simmer.
3. Add the peas to the pasta about 5 minutes before the end of the cooking time.
4. Stir the pesto in with the chicken and soup mix and simmer for around 5 minutes.
5. Drain the pasta and peas and add to the sauce, stirring until all mixed together.
6. Serve with grated cheese on top!

Crispy chicken thighs with red pesto spaghetti

Sun-dried tomato pesto, cream, mushrooms, onions, fresh basil, cherry tomatoes, parmesan - coating spaghetti on a bed of spinach leaves, with parmesan crusted chicken. Mmmmm. Chicken thighs can be quite difficult to eat since these ones had the bones still in, but I actually prefer having a chunk of meat with pasta, rather than it being chopped up inside (unless it's a pasta bake). I used chicken thighs because they still have the skin on and I love the crispy texture with the moist chicken. This is one of my perfect meals since I'm obsessed with pesto and pasta!

Serves 2
- 4 chicken thighs
- olive oil
- salt & pepper
- dried italian herbs
- parmesan, grated
- 180g spaghetti
- 1 red onion, chopped
- handful of mushrooms, sliced
- handful of cherry tomatoes, quartered and some left whole
- 1/2 jar of red pesto (sun-dried tomato)
- dash of cream
- fresh basil, torn
- handful of spinach leaves


1. Pre-heat the oven to gas mark 7. Cut slits in the layer of fat on the chicken thighs - this will help it crisp up.
2. Brush with olive oil, season, sprinkle with herbs and grated parmesan.
3. Bake in the oven for 35 - 45 minutes - cover with foil for the first half of the cooking time!
4. Meanwhile, cook the spaghetti according to packet instructions, and in a separate pan, fry the onions in some olive oil.
5. When softened, add the mushrooms and cherry tomatoes, and continue to fry.
6. Place some tomatoes in with the chicken for the remaining 5 minutes of the cooking time.
7. Once the pasta is cooked, drain and return to the pan. Stir in the onions and mushrooms, and add the pesto and cream, stirring and tossing until coated. Add some fresh basil.
8. Place the spinach leaves in two bowls/plates and serve the spaghetti on top. Top with the chicken thighs and tomatoes. Garnish with some fresh basil and parmesan.

Sea bass with tomato and herb risotto

This risotto can be eaten on its own or goes perfectly well with white fish, like sea bass, or chicken. There was a huge shock horror of not having any normal or risotto rice, but only basmati!! However, I used the basmati and after a long cooking time in lots of stock, it did seem to work - although next time I will use a risotto rice. This is really simple, with the rice you only need a few tomatoes, some fresh herbs (I used parsley), chicken or vegetable stock, parmesan and a dash of cream or mascarpone. We pan-fried the fish so the skin was deliciously crispy, complimenting the soft, creamy risotto perfectly. I added pesto on top of the fish and in the risotto, but if you don't like pesto then it isn't a necessity. I served the risotto on a bed of spinach, and we had broccoli and green beans too, so apart from the dash of cream and bit of parmesan, this is a fairly low-sat-fat meal. The perfect meal if you want to impress!

Serves 2
- dollop of butter/margarine
- 1 onion, finely chopped
- 2 cloves garlic, crushed
- 100g risotto rice
- 3/4 chicken or vegetable stock cube, dissolved in 250ml water
- handful cherry tomatoes, quartered
- large handful of parsley, finely chopped
- drizzle of olive oil
- 2 sea bass fillets
- handful of parmesan, grated
- dash of single cream or mascarpone or crème fraiche
- few teaspoons of green pesto
- handful of ready washed fresh spinach leaves

1. Fry the onions and garlic in the butter until softened. Stir in the rice (it should start to look translucent). Add the stock mixture and cook for around 20 mins, or until the water is absorbed and the rice is soft - you may need to add more water as you go along - keep stirring and testing the rice.
2. Meanwhile, heat some olive oil in a pan and fry the fish for a few minutes on each side, until the skin is crisp, and the fish is cooked through (cut open to check)
3. Add the cherry tomatoes and parsley to the risotto and stir until combined (you can do this before all the water is absorbed). Add the parmesan, some cream and pesto, and season to taste. Make sure all the liquids are reduced.
4. Place the risotto on a bed of spinach leaves and top with the sea bass. Garnish with some pesto, parmesan, fresh parsley, and a few cherry tomatoes!

Tomato and basil bruschetta

A delicious taste of Italy! Tomato and basil are the perfect match, and even better with a dash of balsamic vinegar, basil (green) pesto and a sprinkling of parmesan. These are a crowd-pleasing starter or side dish accompanying any Italian-style food, particularly a pasta dish. So easy to put together but such impressive flavours. Bruschetta is so versatile - you can top it with anything: garlic butter, caramelised onion and goats cheese, mozzarella and sun dried tomato, herby mushrooms etc etc. I served this with carbonara - the recipe is here!
Serves 2
- 1/2 baguette, sliced into eight (I used wholemeal)
- few dollops of green pesto
- large handful of cherry tomatoes, sliced or quartered
- few leaves of fresh basil, torn
- dash of balsamic vinegar
- small handful of parmesan, grated

1. Pre-heat the oven to gas mark 4 / 180 degrees. Place the tomatoes and fresh basil in a bowl and stir in some balsamic vinegar (the smell is amazing!)
2. Spread green pesto on each slice of bread, and place on a baking tray.
3. Spoon the tomato and basil mixture on each slice, grate some parmesan on top, if desired, and bake in the oven for 10-15 minutes or until the bread is crisp and hot to touch.

Tagliatelle with pesto and green beans

As I've said maybe a million times, I love pasta and I love pesto so I'm always throwing them together; it is my ultimate comfort food. I usually love it with bits of bacon and lots of red onion and maybe a dash of cream too, but this seems to be a new favourite and healthier (although I wouldn't say no to the bacon or cream...) This is so simple to make but tastes delicious. I got the idea from the Zizzi's menu a while back - although I just checked and I don't think they do it anymore ahh! Think it was pasta twists with green beans and a very creamy pesto sauce which was scrummy but rich, so I adapted it slightly with what I had in the fridge. This is a really good way to boost getting your 5-a-day for those of you who don't like eating green veg on its own, or who are just bored of doing so. If I have spinach in the fridge I will nearly always put a big handful on my plate and then put whatever I'm eating on top (nearly everything goes with spinach aha) because although I don't like to eat spinach raw, I don't like it when it's all wet and slimey, so this way it wilts perfectly from the heat of the pasta mm mm. Adding bacon and lots of parmesan would make this dish perfecto.
Serves 2
- 200g tagliatelle
- 1 tbsp olive oil
- 1 red onion, chopped
- 150g button mushrooms, sliced
- 1/2 pack of fine green beans, trimmed and cut in half
- 1/2 - 3/4 a jar of green pesto (size of the Sacla or Napolina ones)
- handful of fresh spinach leaves (optional)
- handful of parmesan, grated (optional)

1. Cook the pasta according to packet instructions in salted water (around 10 mins)
2. Fry the onions in the olive oil until softened and add the mushrooms
3. Add the green beans to the pasta water after about half the cooking time (so after 5 minutes)
4. Once cooked, drain the pasta and beans and return to the pan, adding the onions and mushrooms as well
5. Return to the heat, and stir in the pesto (this is where you would also add cream)
6. Serve on a bed of spinach leaves and top with some freshly grated parmesan (and even some fresh basil!)

Don't forget you can add anything to this like chicken or bacon or both, and cream or creme fraiche if you like more of a sauce rather than just a coating! I'm sure other vegetables would be nice in this too, not just green beans, like sugar snap peas, asparagus, brocolli, or peas!

I loved this meal so much that I made it again a week later, but this time with smoked salmon in as well, and wholewheat penne instead of tagliatelle, mm I want everyone else to share the deliciousness!!

Pesto mash

This mashed potato was deliciously creamy and rich, despite not having any cream or crème fraiche in. I decided to use pesto because I've had pesto and cheddar on a jacket potato before and it was so yummy, so I knew that it would taste good in mash as well. I served this with chicken wrapped in pancetta (see previous post) and green vegetables. It's amazing that just by adding a few dollops of green pesto, you can transform a boring mash into something delicious and luxurious! You should definitely try this if you like pesto.

Serves 2
- 450-500g potatoes (I used desiree and vivaldi)
- pinch of salt
- dash of semi-skimmed milk
- knob of butter
- 1/2 small jar of green pesto (or less, or more)
- handful of cheddar, grated


1. Boil the potatoes in salted water for 20-25 minutes, or until soft.
2. Drain and return to the pan. Add some milk and a knob of butter and mash for a couple of minutes until smooth.
3. Add the pesto and stir in, then continue to mash - adding more butter and/or milk depending on the taste/texture you desire.
4. Put the cheddar in and continue to mash. Season to taste, and serve.

Pan-fried sea bass with pesto spaghetti

I haven't had fish for ages and was really craving it last night; then realised that I hadn't ever posted a recipe that included fish on this blog! I love fish, particularly smoked salmon, tuna and any white fish. I rarely have sea bass but it is delicious and easy to work with. I won't take credit for the cooking of it, however, as my boyfriend was actually in charge of the fish frying! As said before in previous posts, I am a big fan of pasta and pesto, it is such a quick comfort food to whip up that isn't too unhealthy, and it tastes delicious. I decided to add some cherry tomatoes and mozzarella. Although this pasta is great on its own and is particularly suited to vegetarians, it also works perfectly with fish or chicken, or even cut up bits of bacon. So if you're thinking oh god i hate fish - then you don't have to use fish, you could grill some chicken or bread it and fry it to place on top, or fry it in chunks and mix it in. You can pretty much do anything with pasta and pesto - add more veg like onions, mushrooms, courgette, brocolli - anything you like, or experiment with adding different cheeses, or adding fresh herbs like basil. If you have ever had the pesto pasta at Zizzi's you will know it is great with a very creamy pesto sauce and green beans. This is a delicious 20-minute dinner!
Serves 2
- 200g spaghetti (or any other pasta)
- drizzle of olive oil
- 2 sea bass fillets
- 1/2 jar of green/basil pesto
- cherry tomatoes, halved or quartered (as many as you like)
- 1/2 ball of buffalo mozzarella

1. Boil water in a pan for the pasta and cook according to the packet instructions (should take around 10 minutes)
2. Meanwhile, heat the olive oil in a frying pan and fry the sea bass, skin side down for 10 minutes on a medium heat, or until the fish is cooking through and the skin is crisp.
3. Drain the pasta and return to the pan. Add the pesto over a small heat. Stir/toss until all the pasta is coated, then stir in the tomatoes and mozzarella. Heat through.
4. Meanwhile, flip the fish onto the other side for a few minutes until cooked through (cut one piece in half to check)
4. Place the pesto spaghetti mix onto the plate and top with the sea bass. This is perfect on its own or served with extra veg - I served with green beans.

The perfect baked potato

Why ruin a perfectly simple jacket potato by shoving it in the microwave for 10 minutes and making it soggy!? For some reason I am far better at using the hob or the oven than a microwave anyway, since every time I use the microwave for my porridge it ends up exploding all down the side of the bowl, and in the case of the famous jacket potato - no matter what I do, whenever I bake it in the microwave the skin wrinkles and goes tough. Although I like jacket potatoes when my mum bakes them in the microwave, I think it's safe to say that everyone loves a fluffy potato with a crisp, flavoursome skin. And here is how...

You will need a jacket potato, olive oil, salt and any other seasoning you like.
Pre-heat the oven to 200 degrees/gas mark 6. Prick the potato with a fork or knife (this is very important - my dad once caused a potato explosion in the oven for not doing this...). Place the potato on a baking tray and brush with olive oil so the whole skin is coated. Sprinkle with salt and any other seasoning (like pepper, season all or fresh or dried herbs), and turn so that the whole potato is covered with seasoning. Bake in the oven for 1 hour 45 minutes - 2 hours. Turn halfway through cooking. The potato will be done when it looks brown in colour and crisp - stick a knife in the potato to check it is cooked through. Don't forget to extend the time if you are baking lots of potatoes at once or if it is particularly large!

Jacket potato toppings:
- Butter
- Any cheese
- Pesto
- Soured cream and chives
- Tuna mayo
- Egg mayo
- Sweetcorn
- Bacon and leek
- Fried onion and mushrooms
- Baked beans
- Coleslaw
- Chilli
- Cottage cheese
- Any flavoured spread like Philadelphia
- Chicken and garlic mayo

You can obviously mix and match any of these toppings to get some delicious flavours
Some of my favourites are:
- Green pesto and cheddar
- Brie and bacon
- Tuna mayo and mozzarella
- Sweetcorn, mushrooms with soured cream and chives
- The classic cheese and beans!

Cheat's Italian calzone

I came across a 'cheat's calzone' in a student recipe book a while back; instead of pizza dough it is a wrap folded in half with filling inside. This makes it more suitable for a lighter lunch, as a proper calzone would be too filling. I changed around the ingredients to make a delicious italian one.

The ingredients:
- Mission deli wrap - Mediterranean herb (one)
- Sundried tomato antipasti (few pieces)
- Green pesto (teaspoon)
- Half-fat mozzarella (few slices)
- Fresh spinach leaves (few leaves)
- Extra virgin olive oil (drizzle for pan)

All of these ingredients can be found in Tesco, but I did get the pesto from Sainsburys, and the spinach from my local fruit & veg market!

Put the ingredients on one half of the wrap  ----->

Then fold the other half of the wrap over the filling, and heat a little olive oil in a frying pan. Gently fry each side of the wrap until crisp and golden brown!

Try adding meat like salami or chicken, or change the ingredients completely! Another favourite of mine is tuna and mozzarella, or goats cheese and red onion.
