Bulgur wheat stuffed pepper

This is an even healthier version of cous cous stuffed pepper, where the cous cous is swapped for bulgur wheat (lower in calories, higher in fibre etc), and goats cheese swapped for spring onions. The flavour is still amazing thanks to the red pesto, sun dried tomatoes, spring onion & parsley, so you really can enjoy a nutritious meal.
Serve with green vegetables or a big handful of fresh spinach leaves!
Serves 1 as a main, or 2 as a starter
- 1 large red pepper
- olive oil- 75g bulgur wheat
- 2 tsp red pesto (I used a Napolina tomato & garlic one)
- salt & pepper
- fresh parsley, chopped
- sun dried tomatoes, chopped
- spring onions, chopped
- 1/2 slice of bread, crumbled

1. Pre-heat the oven to 180 degrees.
2. Cut the red pepper in half and de-pip it. In a baking tray, brush the pepper inside and out with olive oil. Place in the oven for 10 minutes to soften.
3. Meanwhile, cook the bulgur wheat according to packet instructions - on the hob in boiling water for around 15-20 minutes.
4. Remove the peppers from the oven (they should be softer and have a bit of colour).
5. When the bulgur wheat is cooked, stir the pesto, season with salt & pepper, and stir in as many sun dried tomatoes, spring onions and parsley as you wish.
6. Stuff each pepper half with the bulgur wheat mixture, sprinkle with the chunky breadcrumbs then bake in the oven for another 15-20 minutes, or until the pepper is cooked and the breadcrumbs crisp. Serve straight away!

Sun-dried tomato stuffed pepper

A delicious meat-free dish, perfect as a starter or for a healthier mid-week dinner

Serves 1 as a main, or 2 as a starter
- 1 large red pepper
- 60g cous cous
- 2 tsp red pesto (I used a Napolina tomato & garlic one)
- salt & pepper
- dried mixed herbs
- sun dried tomatoes, chopped
- soft goats cheese, crumbled
- 1/2 slice of bread, crumbled
- parsley to garnish

1. Pre-heat the oven to 180 degrees.
2. Cut the red pepper in half and de-pip it. In a baking tray, brush the pepper inside and out with oil from the jar of sun-dried tomatoes (or olive oil). Place in the oven for 10 minutes to soften.
3. Prepare the cous cous according to packet instructions (add boiling water to a bowl of dried cous cous and cover for 5 minutes until soft to the bite and fluffy).
4. Stir the pesto into the cooked cous cous, season with salt & pepper and dried herbs, and stir in as many sun dried tomatoes and as much goats cheese as you wish.
5. Remove the peppers from the oven (they should be softer and have a bit of colour), and stuff each half with the cous cous mixture.
6. Sprinkle with the chunky breadcrumbs then bake in the oven for another 15-20 minutes, or when the pepper is cooked and the breadcrumbs crisp. Garnish with parsley and serve!

Baked Camembert with Garlic and Rosemary

If you're going to treat yourself, do it properly.
There is nothing more comforting on a winter's day than an oozing baked Camembert with warm, crusty bread for dipping. You may be wondering why this Camembert looks like it has exploded - the wooden edging just cracked open in the oven and I am really glad that it did - it meant we got to eat some extra flavoursome cheese that had started to go crisp mmm, but don't worry, the middle was still perfect.
I have posted a Camembert recipe before here and made some rather delicious ham, cheese and chive bread to go with it which you can find the recipe for here. Both were delicious but this time I decided to try fresh rosemary with the Camembert rather than thyme and it was very tasty - although I would recommend either herbs! I also didn't have as much time so I bought some fresh ciabatta from the supermarket to heat up in the oven for dipping in the cheese, but if you do have more time or if it is a special occasion, you should definitely try out the above bread recipe - super quick, easy and yeast free!

Serves 2
- 1 whole Camembert
- 2 fresh garlic cloves
- few sprigs of rosemary
- caramelised onion chutney
- ciabatta
1. Pre-heat the oven to 200 degrees.
2. Remove the Camembert from its packaging and with a sharp knife, make a few slits on top.
3. Slice the garlic and tear the rosemary leaves in half, then push both into the slits.
4. Place the Camembert back in the wooden box and onto a baking tray in the middle of the oven - bake for around 15 minutes or until fully melted in the middle. Place the ciabatta in the oven and bake for the same amount of time.
5. When done, slice the ciabatta and serve immediately - open up the Camembert by removing the top with a knife, then dunk the ciabatta in, and top with a generous amount of chutney!

Feta and spinach filo triangles

These make the perfect starter or buffet food, they are so delicious and surprisingly easy to make. I used ready-rolled filo pastry from Sainsbury's and was really worried because I knew working with filo pastry could be quite tricky as it tends to dry out and crack, but I had no problems with this one at all! The textures were really good and spinach and feta go so well together. These will definitely impress at a dinner party so give it a go. I served this with a salad of mixed lettuce leaves, cucumber, tomato, feta and lemon. 

Makes about 10
- olive oil
- 1/2 red onion, finely chopped
- 150g frozen spinach, thawed and drained
- 100g feta cheese, crumbled
- 50g cottage cheese
- 1/2 egg, beaten
- 10 sheets of ready-rolled filo pastry
- 100g slightly salted butter, melted

1. Heat some olive oil in a pan and gently fry the onions until softened. Add the spinach and cook until the water is evaporated.
2. Mix together the egg, cottage cheese and feta cheese in a jug and add to the onion and spinach. Cook for about 10 minutes, or until thickened.
3. Pre-heat the oven to gas mark 6 / 200 degrees.
4. Place a filo pastry sheet on a clean work surface and brush with melted butter all over.
5. Cut the pastry sheet into 3 equal strips 
 6. Place the sheets on top of one another. Next, place a spoonful of the filling at the end.
 7. Fold into a triangle like below
 8. Then continue to fold into a triangle, until the filling is completely encased.
 9. Butter the end of the leftover pastry and fold over. Brush both sides of the completed filo triangle with butter and place on a baking tray.
10. Repeat until all the mixture has gone then bake in the oven for 12-15 minutes, or until hot in the middle and golden brown.
11. Serve with a greek salad!

Fried halloumi fingers

For my sister's birthday, my mum and I decided to do a Greek themed night. I did the starters (this halloumi, feta and spinach filo pastries and greek salad) and for main we had pork stifado (instead of beef), and lamb and feta kebabs with cous cous. Everything was so delicious, it all worked really well. I don't have the recipe for the stifado, but there are lots of good ones online - it's basically a casserole type dish made with beef, red wine, stock, cinnamon etc. so had lots of rich flavours. The halloumi was really good it has such a strong flavour, and a crisp texture from the sesame seeds which we coated them in.

Serves 5
- Block of halloumi
- olive oil
- sesame seeds
- dried oregano

1. Cut the halloumi into strips
2. Brush both sides of each piece with olive oil and coat in sesame seeds. I did some without sesame and with dried oregano instead.
3. Pour more oil into a large frying pan and fry the cheese on a high heat until golden and crispy. Serve with a sprinkling of dried oregano.

Brie and cranberry parcels

These make perfect starters and are actually more ideal for Christmas time, but I had all the ingredients in the house so couldn't resist! They're really messy and all oddly shaped (as you can see...) but I love that they're a bit different. The filo pastry I used was the jus rol brand and had actually been opened for quite a while so had dried out a fair bit, making these harder to shape - so if you use the pastry fresh then they will probably look neater and more appealing. 
*I'm not going to put exact quantities because it becomes pretty obvious when making them and it depends how many you want to make for however many people*

Ingredients
- Filo pastry cut into squares
- butter, melted
- brie, sliced
- cranberry sauce/jelly

1. Pre-heat the oven to gas mark 5 / 190 degrees.
2. To make one parcel, take 3 squares and brush them with melted butter. Layer them on top of one another with the points sticking out at different angles, like a star shape.
3. Place a slice of brie in the middle and a teaspoon of cranberry sauce and lift the pastry corners up to form a parcel, pushing together gently with fingers.
4. Brush the outside with more melted butter and place on a baking tray.
5. Repeat as many times as you desire!
6. Bake in the oven for 15 - 20 minutes, or until the filling is hot and melting, and the pastry golden brown and crisp.

Stuffed red peppers

I made these with the stuffed mushrooms - I love meals like this, I just think it's a really good way to eat the vegetable as opposed to just having them chopped up in something - it's much more interesting and you actually get the flavour of the pepper. I made a simple tomato and basil risotto to go inside and then just topped it off with lots of cheddar cheese!

Serves 2
- 1 large red pepper, cut in half
- olive oil
- 1/2 vegetable stock cube with 300ml water
- 125g rice
- cherry tomatoes, quartered
- basil leaves, torn
- cheddar cheese, grated

1. Pre-heat the oven to gas mark 4 / 180 degrees, and remove the seeds from the pepper.
2. Brush the pepper halves with olive oil and place on a baking tray.
3. Meanwhile, to make the risotto, prepare the stock and pour into a pan, bringing to the boil. Add the rice and cook over a moderate heat for 15-20 minutes, or until the water is absorbed and the rice is soft to taste. (You can always add more water)
4. Add the tomatoes and basil to the rice, and stir, heating for a few minutes.
5. Stuff the pepper halves with the risotto and grate lots of cheddar cheese on top.
6. Bake in the oven for 20-30 minutes, or until the pepper is softened and the cheese is melted.

Stuffed mushrooms

I cooked these the other night and had them with stuffed pepper as well as a main course, but these would make perfect starters. These were so flavoursome from the onion, cheese and salty bacon, and the soft mushroom texture went perfectly with the crunch of breadcrumbs sprinkled on top! Some chopped fresh parsley would have finished this off but I didn't have any in the house - would also improve presentation if sprinkled on top to add extra colour.

Serves 2
- 2 large flat mushrooms
- 4 rashers of bacon, chopped
- 1 red onion, chopped
- olive oil, for cooking
- parmesan, grated
- 1 slice of bread, torn to make breadcrumbs

1. Pre-heat the oven to gas mark 4 / 180 degrees.
2. Cut the stalks off the mushrooms, and chop into small pieces.
3. Fry the bacon in some olive oil, then add the onion and mushrooms. Cook for around 5 minutes, or until the onion is softened. Set aside.
4. Brush the flat mushrooms with olive oil and fry for a few minutes to begin softening.
5. Place on a baking tray and top with the bacon and onion mixture. Grate some parmesan on top and place in the oven for 15-20 minutes. (Lots of water will probably seep out of the mushroom during cooking, so don't be surprised if the tray is wet)
6. To finish off, top the mushrooms with breadcrumbs, and cook under the grill for a coule of minutes, or until the breadcrumbs are toasted.

Tomato and basil bruschetta

A delicious taste of Italy! Tomato and basil are the perfect match, and even better with a dash of balsamic vinegar, basil (green) pesto and a sprinkling of parmesan. These are a crowd-pleasing starter or side dish accompanying any Italian-style food, particularly a pasta dish. So easy to put together but such impressive flavours. Bruschetta is so versatile - you can top it with anything: garlic butter, caramelised onion and goats cheese, mozzarella and sun dried tomato, herby mushrooms etc etc. I served this with carbonara - the recipe is here!
Serves 2
- 1/2 baguette, sliced into eight (I used wholemeal)
- few dollops of green pesto
- large handful of cherry tomatoes, sliced or quartered
- few leaves of fresh basil, torn
- dash of balsamic vinegar
- small handful of parmesan, grated

1. Pre-heat the oven to gas mark 4 / 180 degrees. Place the tomatoes and fresh basil in a bowl and stir in some balsamic vinegar (the smell is amazing!)
2. Spread green pesto on each slice of bread, and place on a baking tray.
3. Spoon the tomato and basil mixture on each slice, grate some parmesan on top, if desired, and bake in the oven for 10-15 minutes or until the bread is crisp and hot to touch.

Goats cheese and caramelised onion tart (Valentine's Day starter)

Goats cheese and caramelised onion tart
(As seen on Masterchef Celebrity 2010 - Lisa Faulkner won with this as part of her 3 course meal)


I previously used ready made puff pastry to make this starter, but making shortcrust pastry makes this more rewarding and rich in taste and texture :) I would definitely recommend this for any special occasion!

Pastry preparation and cooking - make sure you have some baking beans or something similar as this pastry is cooked blind before the filling goes in!

I love making the caramelised onion filling (onion, sugar, butter, balsamic), it smells divine when it's cooking, and tastes even better! I made the goats cheese filling (goats cheese, egg yolk, cream) with spreadable goats cheese instead of crumbly, although I think crumbly would have worked better for texture...
I garnished with spinach leaves, a dash of balsamic, and dried thyme!
