Sweet Potato Cottage Pie

Cottage pie is the perfect way to feed all the family - it contains 5 different vegetables, and is delicious and very filling - it will go a long way so is great value for money. You can prepare it in advance, and is a great way to get in some veggies without really noticing. Also perfect as a meal for one or two as you will be left with portions for the rest of the week or to freeze and re-heat at a later date.
Just look at that cheesy goodness making it the ultimate 'healthy' comfort food!
Sweet potato is a great alternative to normal potatoes as not only do they have a great flavour, but they are also higher in vitamins and have a lower GI, so they transform the traditional cottage pie to a more tasty and healthy meal for the family!

Serves 4
- 2 medium-large sweet potatoes, peeled & chopped
- olive oil
- 500g pack of extra lean beef mince
- 2 onions, chopped
- 2 carrots, chopped
- 4 cloves of garlic, crushed
- 5 large mushrooms, sliced
- few generous glugs of Worcester sauce
- tomato ketchup (or tomato purée, if you have it)
- dried mixed herbs
- small handful of plain flour
- 500ml beef stock
- 200g frozen peas
- dash of milk
- knob of butter
- salt & pepper
- 75g extra strong cheddar cheese
1. Bring a large pan of salted water to the boil and cook the sweet potato until soft (about 20 minutes), and pre-heat the oven to 180 degrees.
2. Meanwhile, drizzle some olive oil into a large saucepan and brown the mince. Add in the onion and carrot and cook for a few more minutes.
3. When softened, add the cloves of garlic, mushrooms, Worcester sauce, tomato ketchup, dried herbs and flour, and mix together until combined.
4. Pour in the prepared beef stock and bring to the boil, then add the frozen peas. Simmer for about 10 minutes or until reduced and thickened.
5. Drain the sweet potato when cooked and return to the pan. Pour in some milk, butter and season, then mash until smooth.
6. Pour the mince mixture into a large oven-proof dish, then smooth the sweet potato mash on top using a spoon. Grate the cheddar on top and bake in the pre-heated oven for about 20 minutes, or until piping hot in the middle and golden on top.
7. Serve hot from the oven with green veg of your choice (I had long-stemmed broccoli!)

Beef casserole & roast potatoes

A hearty beef casserole to warm you up through the cold weather
Perfect with some crispy-bottomed roasties
Serves 2-3

For the casserole
- olive oil
- 1 large onion, thickly chopped
- 1 clove of garlic, chopped
- 450g casserole steak, chopped
- plain flour
- salt & pepper
- 2 carrots, chopped
- 2 tbsp worcestershire sauce
- 400ml beef stock
- 100g mushrooms, chopped
- sprigs of fresh thyme

For the roast potatoes
- maris piper or king edward potatoes, halved or quartered
- olive oil
- seasoning (spice & herb blend or whatever you like)

1. Pre-heat the oven to 180 degrees.
2. In a large pan, fry the onion and garlic in a generous amount of olive oil for a few minutes. Then add the beef, a sprinkling of flour and seasoning and stiry to combine, cooking for a few more minutes.
3. Next add the carrots, then the best ingredient
4. And the beef stock. Bring to the boil, then simmer.
5. Add the mushrooms and fresh sprigs of thyme, then transfer to a casserole dish with a lid, and cook in the oven for about two hours (stirring halfway through). 
6. Meanwhile, while the casserole is cooking, for the roast potatoes, prepare as many as you wish (depending on your appetite) and par-boil in salted water for around 10-15 minutes.
7. Drain and place on kitchen paper, leaving to cool and dry out for 20-30 minutes.
8. Pour a generous amount of oil into a roasting tin and place in the oven, turning it up to 200 degrees, until the oil has heated up.
9. Remove the tray from the oven and transfer the potatoes into the dish, coating in the hot oil. Season well and then roast in the oven for around 40 minutes, or until crisped to your likening.
10. By the end of the two hours, your casserole should be thicker (add cornflour if not) and ready to serve, accompanied by roasties that are fluffy in the middle, and crisp on the outside.

Spaghetti Carbonara

I was craving creamy pasta so bad the other week that I had to whip up a classic carbonara. It was so delicious it didn't stay on my plate for very long. This dish is right at the top of my favourite comfort foods, and is great for a special occasion if you don't have much time but want something that will impress. Perfect served with some oozing garlic bread.

Serves 2
- 100g pancetta, cubed
- 150g mushrooms, sliced
- 2 cloves of garlic, crushed
- 200g spaghetti
- 2 eggs, beaten
- 150ml double cream
- pepper
- fresh parmesan, grated

1. Fry the pancetta in olive oil or butter until it starts to crisp, then add the mushrooms and garlic and cook until softened.
2. Meanwhile, in salted boiling water, cook the spaghetti according to packet instructions (about 10 mins).
3. Mix together the beaten egg and cream in a jug and add as much black pepper as you like. Stir in a generous amount of grated parmesan.
4. When the spaghetti is cooked, drain and add to the pan with the pancetta and mushrooms.
5. Pour in the egg and cream to the pasta and stir until combined over a low heat for a few minutes.
6. Serve immediately and grate a generous amount of parmesan on top and some more pepper, et voila!

Bolognese bake

 (I only took one photo when out of the oven - apologies!)
Super easy, delicious food that everyone will love. A twist on a good old spag bol - take an exciting, different pasta like conchiglioni (large pasta shells) and bake with mozzarella and fresh basil!

Serves 4
- 450g lean beef mince
- 2 cloves of garlic, crushed
- 2 red onions, chopped
- 200g mushrooms, sliced
- jar of good pasta sauce (I used Sacla with whole tomatoes in - see pic below)
- glug of balsamic vinegar
- seasoning
- 350g conchiglioni (or pasta of your choice)
- 1 ball of mozzarella, sliced
- handful of fresh basil
- handful of cheddar cheese, grated

1. For the bolognese part, brown the mince in a large pan then add the garlic and onions and cook for a few minutes before adding the mushrooms.
2. Meanwhile, cook the pasta in salted water according to packet instructions.
3. When the mince mixture is cooked through, add the sauce, balsamic vinegar and seasoning. Bring to the boil and then simmer for 5-10 minutes.
4. Pre-heat the oven to 200 degrees.
5. When the pasta is cooked, drain and mix with the bolognese mixture.
6. Pour everything into a baking dish and top with the slices of mozzarella and torn basil leaves. Don't forget to grate some cheddar on top too.
7. Bake in the oven for 20-25 minutes or until bubbling and golden brown on top.

Cottage pie

Perfect comfort food! Home cooking doesn't get much better than a delicious cottage pie fresh and hot from the oven. The rich meat filling (with lots of hidden vegetables) with the buttery, crispy cheese topped mash will satisfy everyone.

Serves 2-4
(We eat quite big portions so adapt this accordingly - we saved one portion of mince mixture to freeze - if you were using all the mince then do slightly more mashed potato!)
- olive oil
- 1 onion, chopped
- 2 carrots, chopped
- 500g lean beef mince
- 150g mushrooms, sliced
- dried mixed herbs
- 2 tbsp tomato purée
- generous dash of Worcester sauce (Lea & Perrins)
- generous glug of red wine
- 450ml beef stock
- 600g potatoes, chopped
- dash of milk
- large knob of butter
- cheddar cheese

1. Heat some olive oil in a large pan, then add the onions and carrots, and soften for a few minutes
2. Add the mince to the mixture and cook until browned, stirring to break up the meat.
3. Add the mushrooms and sprinkling of dried herbs, and continue to cook for a few minutes, stirring occasionally.
4. Add the tomato purée, Worcester sauce and the red wine.
5. Bring to the boil, then simmer for about half an hour, or until the sauce is reduced and thickened.
6. Meanwhile, pre-heat the oven to 200 degrees, and boil the potatoes in salted water.
7. When the potatoes are done (after about 20 minutes), drain and return to the pan. Add the milk and butter and mash until smooth and creamy.
8. When the mince filling is ready, pour into a circular baking dish, and top with the mashed potato, smoothing with a fork. Top with a lot of grated cheddar!
9. Bake in the oven, uncovered, for 20-25 minutes, or until the filling is bubbling, and the top golden brown. Serve straight away with some green veg!

Beef Bourguignon

I'm surprised to say that I don't think I've ever even tried beef bourguignon before, so when I wanted to cook this for mother's day I decided to stick with Lisa Faulkner's recipe, since her recipes always turn out well and are delicious - this was no exception. I even served it with mustard mash, as she suggested, and it all worked beautifully together, everyone loved it. I would highly recommend this recipe, even though I don't have any others to compare it to (I've heard Lorraine Pascale's is also good), because the beef was so tender and the flavours were amazing from the shallots, wine and bacon mm mm. Perfect for a special occasion.

Serves 4-6
- 500g stewing/braising steak
- flour, for dusting
- olive oil, for frying
- 200g bacon lardons
- 300g shallots, peeled and halved
- 3 garlic cloves, crushed
- 2 tbsp tomato purée
- 125g button mushrooms
- 500ml red wine
- 250ml beef stock
- 1 bouquet garni (dried parsley, thyme, rosemary and bay leaf)
- salt and pepper

- mustard mash - potatoes, milk, butter, wholegrain mustard

1. Preheat the oven to 160 degrees.
2. Coat the beef in seasoned flour.
3. Heat a generous amount of oil in a large casserole dish and brown the meat. Using a slotted spoon, remove the meat and set aside.
4. In the same dish, add the lardons, shallots and garlic and fry until browned.
5. Add the tomato puree and mushrooms. Return the beef to the dish and add the wine, stock and herbs.
6. Bring to the boil then cover with a lid and cook in the oven for around 3 hours. Serve with mustard mash!

Chicken casserole

Once again, sorry for the un-appetising photos but there's no pleasant way to photograph any sauce that has leeks and mushrooms in ha... This was something I threw together at the last minute and it turned out really well in the end. I called it a casserole but it doesn't even go in the oven so it's really simple and quick to make but tastes delicious. It's made with chicken thighs which I love as they're so tender. Best served with rice!

Serves 2
- olive oil
- 3 skinless and boneless chicken thighs, cut in half
- plain flour
- 1 leek, sliced
- 3 rashers of bacon, chopped
- 100g mushrooms, quartered
- 100ml white wine
- 250ml chicken stock
- 1 tsp dried parsley or mixed herbs

1. Heat some olive oil in a pan and coat the chicken thighs in some flour - cook the chicken thighs in the oil until golden brown. Set aside.
2. Next, fry the bacon, leek and mushrooms in the pan until softened. Pour in the wine and chicken stock and simmer for about 10 minutes. (Meanwhile, cook the rice in a separate pan)
3. Return the chicken to the pan and add the herbs and seasoning. Cook for a further 5 minutes then serve with the rice.

Steak and ale pie

Hands down, this is the best pie I've ever had. You've probably seen on here that I love both the chicken and mushroom pie and turkey and leek pie (both Lisa Faulkner recipes) but this was another level - absolutely delicious and perfect as a winter comfort food. Traditional British pub food that has brilliant flavour and textures. I served this with cheesy mash and veg but it would work equally well with chips or home-made wedges too! Sorry if the photos look unappetising - pie is a bit tricky to dish up looking spectacular...

Serves 3-4
- 450g beef (stewing steak, diced beef etc.)
- 10g flour
- olive oil or butter
- 1 onion, chopped
- 1 carrot, chopped
- 100g mushrooms, chopped
- 2 tsp dried thyme
- 200ml good-quality ale
- 250ml beef stock
- salt and pepper
- ready-rolled puff pastry
- 1 egg, beaten

1. Coat the beef in the flour and season.
2. Cook the meat in the oil or butter in a large saucepan until browned.
3. Add the onion, carrot, mushrooms, thyme, ale and stock. Stir and bring to a simmer, then cover for an hour, stirring occasionally. 
4. Pre-heat the oven to 220 degrees and grease a baking dish.
5. Cut out the puff pastry to line the dish and pour in the beef mixture.
6. Top with more puff pastry, sealing the sides, and glaze with beaten egg.
7. Bake in the oven for 20-30 minutes, or until golden brown and puffed up. Serve with potato of your choice.

3 simple pasta dishes

Spaghetti bolognese, carbonara, macaroni cheese, and even pasta and pesto can get boring (can't believe I just said that!) so I have come up with 3 really easy pasta meals that taste delicious. They may not be the lowest in fat but they are still fairly nutritious with chicken or tuna, and a variety of different veg. Give them a try - they will not disappoint!

1. Chicken and bacon pasta with garlic and herb cream cheese
This is so delicious, I had this tonight and the flavour is amazing from the smoked bacon and garlic. It was really filling as well and contains a variety of different vegetables. 

Serves 2
- olive oil
- 1 chicken breast, sliced
- 3 rashers of smoked bacon, chopped
- 175g pasta
- 1 onion, chopped
- 1 clove of garlic, crushed
- handful of mushrooms, sliced
- green beans, cut in half
- 1/3 200g pack of garlic and herb Philadelphia cream cheese
- handful of fresh spinach leaves
- sprinkling of cheddar cheese

1. Fry the chicken breast in olive oil until browned, add the bacon and stir for a few minutes.
2. Meanwhile, cook the pasta according to packet instructions.
3. Add the garlic and onion to the bacon and chicken - cook until softened, then add the mushrooms.
4. Add the green beans to the pasta water about 5 minutes till the end of cooking time. Then drain and add to the chicken and bacon pan.
5. Stir in the garlic and herb cream cheese until all coated, and serve on a bed of fresh spinach leaves (or stir them in if you prefer them more wilted) with a sprinkling of cheddar cheese. Voila!

2. Cheesy, tuna pasta
This was a really thrown together meal when I couldn't decide what to have. I had some leftover tuna and mayo that I had in a sandwich the previous day and decided to have this with pasta. This was such a delicious meal but fairly naughty with butter and lots of cheese. Thinking about it, I should have added peas or sweetcorn, or both, to make it a bit more exciting and nutritious. I really love tuna and mushrooms together but for those of you who don't like mushrooms, you don't have to add them!

Serves 1
- 100g pasta
- olive oil
- 1 clove of garlic, crushed
- handful of mushrooms, sliced
- 1/2 tin of tuna mixed with little bit of mayo
- knob of butter
- big handful of cheddar, grated

1. Cook the pasta according to packet instructions.
2. Meanwhile, heat some olive oil and fry the garlic and mushrooms until softened.
3. Stir in the tuna and mayo. Drain the pasta and add to the pan.
4. Stir in the butter and cheese and serve!

3. Creamy pesto pasta
The basis for this recipe came off the campbells condensed, creamy chicken soup tin! It is just a more interesting way to enjoy pesto, since it's really creamy and comforting. I decided to add peas and onion as well, and I used turkey instead of chicken.

Serves 2
- 175g pasta
- 1 chicken/turkey breast, chopped
- 1 onion, chopped
- 1 tin of campbells condensed cream of chicken soup
- 120ml milk
- 1/2 jar of green pesto
- peas
- cheddar cheese, grated

1. Cook the pasta according to packet instructions.
2. Fry the chicken and onion in some olive oil then add the soup and milk, stirring. Bring to the boil then simmer.
3. Add the peas to the pasta about 5 minutes before the end of the cooking time.
4. Stir the pesto in with the chicken and soup mix and simmer for around 5 minutes.
5. Drain the pasta and peas and add to the sauce, stirring until all mixed together.
6. Serve with grated cheese on top!

Lasagne

 This is the perfect comfort food now we're getting into the winter months. This is just a standard lasagne recipe, nothing special, just absolutely delicious pasta, mince, sauce and cheese! It takes a fair bit of time but it is definitely worth it and this made enough for two huge portions for my boyfriend and I, plus 3 extra meals for me to freeze for other dinners - yipee! I served this with some make-shift garlic bread - my mum bought me up some home made soda bread which is yummy on it's own, but we made some garlic butter (just melted butter and crushed fresh garlic, believe it or not) and spread it on top and baked in the oven, mm mm.

Serves 4-5
- 500g lean beef mince
- 2 red onions, chopped
- 2 garlic cloves, crushed
- 2 red peppers, chopped
- handful of mushrooms, sliced
- 1 tin of chopped tomatoes
- 1/4 a jar of tomato pasta sauce (or more chopped tomatoes)
- handful of cherry tomatoes
- dried mixed herbs (basil, oregano, parsley etc.)
- pack of dried lasagne sheets
- 25g butter
- 25g flour (plain or self raising)
- 500ml milk
- generous handful of cheddar cheese, grated

1. Brown the mince in a large pan, then add the onion and garlic, cooking until softened. Add the peppers and the mushrooms, and cook for another few minutes.
2. Pour in the chopped tomatoes and bring to the boil, then simmer. Pre-heat the oven to 180 degrees / gas mark
3. Spoon some tomato pasta sauce in the bottom of some baking dishes and place some lasagne sheets on top. Put a layer of the mince mixture on top then layer with some more lasagne sheets.
4. Meanwhile, to make the bechamel sauce, melt the butter in a pan and stir in the flour. Gradually add in the milk, stirring constantly until thickened. This can take up to 20 minutes - be patient and just keep stirring, it will be worth it!
5. On top of the pasta sheets place another layer of mince, followed by some bechamel sauce. Finish with a final layer of lasagne sheets, followed by bechamel sauce and lots of cheddar
6. Bake in the oven for around 45 minutes, or until piping hot, the pasta is soft and the top is golden brown.

Penne with pesto and field mushrooms

I bet you're thinking oh god not another post about pasta and pesto... sorry, I just couldn't resist! This is my all-time favourite meal when I want something quick, satisfying, delicious and not too unhealthy (so most nights, haha). Two ingredients - pasta and pesto, and you can do so many different things with them. This is pasta, green pesto, green beans, cherry tomatoes, fresh basil, field mushrooms, fresh parmesan and some caramelised onion chutney mm mm. I would usually just add green beans, mushrooms, onion and spinach like here, but recently I've started liking cherry tomatoes a lot more and had some large flat mushrooms in the fridge which I wanted to bake in the oven. This is vegetarian so for those who have to have meat with dinner, chicken and/or bacon are brilliant with this too, and probably salmon or tuna, although I have yet to try that. This is a perfect dish for students who will nearly always have pasta and a jar of pesto in their cupboard - onions are really cheap to add in, as are tomatoes and green veg to make sure you're being fairly healthy. Parmesan is expensive so have it without or grate some cheddar cheese on top if you wish. I have some friends who cook pasta and pesto almost every night at uni but it's different each time because you can add so many different things, so it takes a while to get boring. I didn't use onion or garlic in this recipe because I wanted to keep it all to one pan, so this is also ideal for students who are trying to save time and don't want to do a lot of washing up!
**I will be making some posts in the near future of easy but delicious meals for students, as this has been requested, so check back if you're in need of some recipes to follow or just some tips and ideas on how to eat well on a budget!**

Serves 1
- 90g wholewheat penne
- 2 large field mushrooms
- olive oil
- handful of fine green beans, cut in half
- cherry tomatoes, halved or quartered
- 1/3 jar of green pesto
- fresh parmesan, grated
- few leaves of fresh basil, torn
- 1 heaped tsp caramelised onion chutney (optional)

1. Pre-heat the oven to gas mark 4 / 180 degrees.
2. Brush the mushrooms in olive oil and season. Place on a baking tray, cover with foil, and bake in the oven for around 20 minutes.
3. Cook the penne pasta in boiling water according to packet instructions (around 15 minutes)
4. Add the green beans to the pasta water when the pasta has about 5 minutes remaining on the cooking time. Drain together and return to the pan.
5. Stir in the cherry tomatoes and pesto until the pasta is coated.
6. Remove the mushrooms from the oven when soft all the way through and place on a plate, and serve the pasta on top / next to the mushrooms.
7. Sprinkle with parmesan and fresh basil, and serve with caramelised onion chutney if you wish.

Chicken chasseur with new potatoes in parsley butter

So this doesn't look particularly appetising... it looked better in real life! I've had one of those schwartz (but the Tesco version) chicken chasseur packet mixes lying around for ages and instead of using it I thought, I'm gonna make it from scratch! It went really well - I looked at a few different recipes beforehand and decided on the ingredients I wanted to use (or had in the house) and the result was scrummy. I'm not a huge fan of new potatoes (does anyone else think they taste weird?) so lathering them in butter and parsley was a genius idea. There is parsley in the chasseur as well so this worked nicely, as would parsley mash - I've made this before and it's delicious. You can tell I have a lot of parsley to use up... my mum bought a lot because it's a key ingredient in my favourite meal which she cooked me the other day (may share this recipe with you soon!) so I've been trying to use it up. Another great way to use parsley is making a lemon and parsley sauce (parsley, lemon juice, butter) which is yummy with chicken (just flatten and fry some chicken breasts). Chicken chasseur traditionally has wine in it but we didn't have any in the house and it tasted fine without, just not as rich I suppose. I have never really cooked this meal before and it made a really nice change - I would never really put chicken and chopped tomatoes together but, hey, it works! I used chicken thighs because they're much more moist and tender than chicken breast when cooked this way.

Serves 2
For chicken chasseur
- drizzle of olive oil
- 2 cloves garlic, crushed
- 1/2 red onion, chopped
- 4 rashers bacon, cut into large pieces
- 2-3 chicken thighs, skinless and boneless, cut into chunks
- 150g button mushrooms, or larger mushrooms, quartered
- 1 tbsp plain flour
- 400g tin chopped tomatoes
- 1/2 beef stock cube
- dash of Worcestershire sauce 
- large handful of fresh parsley, chopped

For potatoes
- 450-500g jersey royal potatoes
- large knob of butter
- handful of fresh parsley, chopped
- salt & pepper


1. Heat the olive oil in a deep pan and fry the garlic and onion for a few minutes until softened. Add the bacon and cook for a further few minutes, until the bacon begins to brown. Add the chicken pieces for around 5 minutes, or until they are cooked through and browned.
2. Add the mushrooms and stir to coat in the oil/bacon and chicken fat. Continue to cook until reduced in size and softened. Add the plain flour and stir until coated and a sort of paste has been formed. Pour in the chopped tomatoes and crumble in the beef stock cube. Boil for about 10 minutes, or until thickened.
3. Pour in a dash of Worcestershire sauce and add the parsley. Season to taste and serve with the new potatoes (see below).

2. Meanwhile, in a small pan, melt the butter and stir in the parsley.
3. Once the potatoes are softened, drain, and stir in the parsley butter and serve with the chasseur and green vegetables (I cooked green beans).
