Tapas ideas/recipes

I have already posted individual recipes for Patatas Bravas with chorizo and sweet potato fries but just wanted to share some other 'tapas' ideas and quick recipes to make at home for the perfect Saturday night in!

1. Cheesy garlic pizza bread with brie & red onion
Shop-bought cheesy garlic pizza bread then simply slice a red onion, and whack on some brie and freshly chopped parsley! Heaven.

 2. Smoked cheese & tomatoes
 Visit your local fresh cheese counter and see what you can find - I bought some smoked cheddar with a paprika crust (to die for), and just bought some simple cherry tomatoes.

3. Lamb & mint meatballs with tzatziki
 You can't make everything... so you can pick these delicious meatballs up from Sainsbury's - they have amazing flavour and taste so good dunked in tzatziki (which was also not home-made...)

4. Chicken & mushroom wholegrain mustard wraps
Fry some chicken chunks in olive oil until cooked, then add in some fresh garlic and mushrooms. Once cooked, stir in a teaspoon of wholegrain mustard and some soft cheese (e.g. Philadelphia). Serve in a bowl then spoon into wholegrain wraps with some fresh spinach leaves. Delicious!

5. Don't forget the dips!
Of course you can make your dips from scratch but if you don't want to be slaving in the kitchen all night long then opt for some ready made salsa, tzatziki and garlic mayonnaise - perfect dips for all of the above dishes.

Chicken tabbouleh

A light, summery bulgur wheat dish
Perfect for a healthy lunch (can prepare the night before and eat cold the next day) or for a light dinner.
My version is not spicy as I am not a big fan of spicy food but feel free to cook the chicken with spices. Since the onion is raw, prepare for strong flavours but they work so well together and this dish tastes deliciously fresh and nutritious!
This will be perfect at barbecues or picnics in the summer time but it's okay to start a little early!

Serves 2
- 2 chicken breasts, chopped
- olive oil
- 1 garlic clove, crushed
- paprika
- 1 red onion, finely chopped
- 2 large tomatoes, chopped
- 1/2 cucumber, chopped
- 100g bulgar wheat
- lemon juice
- fresh mint, torn (I didn't have any but I would recommend)
- fresh parsley, chopped
1. Pre-heat the oven to 180 degrees, then in a small roasting tin, brush the chicken with olive oil, and coat in the garlic and as much paprika as you would like, as season. Cover with foil and cook in the oven for about 20 minutes.
2. Place the chopped onion, tomatoes and cucumber into a large bowl and set aside.
3. Prepare the bulgar wheat according to packet instructions (Cook in a pan of boiling water - enough to be fully absorbed - keep adding more until soft to bite).
4. Mix the cooked bulgar wheat into the large bowl with the other ingredients and stir until combined.
5. When the chicken is cooked, stir into the bulgar wheat mixture than squeeze fresh lemon juice on top and mix in the parsley and mint, leaving some to garnish.
6. Either eat straight away as a warm dish or leave to cool for later or the next day!

Mint chocolate cupcakes

I made these yesterday for my sister's birthday celebrations tonight, and they were so delicious! Chocolate and mint is always the perfect match, and with a mint aero bubble on top, what could be better? These look really cute and taste surprisingly light and refreshing. I used a large star piping nozzle that I recently brought off Amazon and you can really tell the difference - I think these look a lot more professional than previous cupcakes I have made - it's definitely worth the money. These would also look good decorated with after eight mints.
For the chocolate sponges (makes about 24)
- 225 margarine/butter (or both)
- 225g caster sugar
- 4 eggs, beaten
- 225g self raising flour
- 1/2 tsp baking powder
- 2 tbsp semi skimmed milk
- 1 tsp vanilla essence
- 4 tbsp cocoa powder

For the peppermint buttercream
- 150g unsalted butter
- 225g icing sugar
- 2 tbsp hot milk
- 4 tsp peppermint extract (according to taste)
- few drops of green food colouring
- mint aero bubbles, to decorate

1. Pre-heat the oven to gas mark 4 / 180 degrees. Line a few cupcake trays with cupcake cases.
2. Beat together the marg/butter and sugar until light and fluffy. Gradually beat in the eggs, adding flour occasionally if curdling occurs.
3. Sift the remaining flour, baking powder and cocoa powder into the bowl, then gradually whisk in the milk and vanilla essence.
4. Spoon into the cupcakes cases and bake in the oven for around 20 minutes. Leave to cool on a cooling tray.
5. For the butter cream, cream together the butter, sugar and milk until smooth. Add the peppermint extract and food colouring and stir thoroughly. Taste and if necessary add more of the peppermint.
6. Using a disposable piping bag and a large star nozzle, pipe the buttercream on top of each cupcakes - be generous! Place a mint aero bubble on top and voila!
I ran out of buttercream and so decorated the remaining 3 cupcakes like this, ha ha ha it makes me laugh:

St. Patrick's Day Peppermint Creams

Happy St. Patrick's Day! I'm not Irish, but this festive day seems to be increasingly popular in Britain and America so thought I would celebrate with some delicious sugar treats. My family and I usually make peppermint creams at Christmas time, and use Christmas shape cutters such as stars, holly leaves, bells etc. I wanted to make these today 1. because I could use green food colouring since mint is associated with green anyway and 2. because I got the recipe from my favourite baking and treats cookbook of all time (I will put a picture and link at the bottom of this post as per usual!) These are so simple to make, with only a few ingredients, and they are so cute and delicious. They are light and refreshing and go perfectly with dark chocolate decorations. So if you want to whip up something festive today, these are the winners!
Makes 30 (I divided it by 3)
Ingredients:
- 300g icing sugar, plus extra for dusting
- 1 egg white
- peppermint extract, to taste
- green food colouring
- dark chocolate, melted for decoration

1. Sift the icing sugar into a bowl. Whisk the egg white with a fork in another large bowl until a little frothy.
2. Beat in half the icing sugar to the egg white. Add a few drops of peppermint extract, then gradually add the rest of the icing sugar until you have a firm paste.
3. Add a few drops of food colouring and mix or knead in to the paste.
4. Sprinkle icing sugar on the work surface and roll out the paste.
5. Cut out any shapes you desire and place on a baking sheet on a tray. Leave to dry out in a cool place.
6. Melt the dark chocolate and spread or drizzle on the peppermint creams. Place in the fridge for an hour or two.

This is the book I got the recipe from, it is brilliant, it has pretty much anything you could ask for in terms of sweet treats. It even has savoury treats such as muffins, croissants etc. I definitely recommend!
